Oxygen and bright light are the worst flavor busters for roasted beans, so unless the store is conscientious about selling fresh coffee, the storage tubes get coated with coffee oils, which turn rancid. Coffee beans packaged by quality-conscious roasters and sold in sturdy, vacuum-sealed bags are often a better bet.

Whats The Best Cold Brew Brewing Time
We recommend letting your cold brew steep for 12 to 18 hours. This is a big range, but keep in mind that its a slow process, so the flavor wont be drastically different at either end of the range. The biggest thing to avoid is brewing for longer than 24 hours, after which your cold brew may be undrinkable and very over-extracted. Try brewing for 12 or 14 hours to start and see what you think! If the flavor isnt strong enough, let your next batch brew for longer.
So What’s The Deal With Cold Brew Concentrate

You Dont Have To Worry About An Uneven Grind
Most blade grinders chop the beans imperfectly, which means all those bean fragments are a different size and they are going to brew at different rates. Some will be under-extracted , some will be over-extracted . You kind of get the worst of both worlds, and it can actually cause the cup of coffee to taste worse than if you just brew it with whole coffee beans.
So if you accidentally bought whole coffee beans, you dont have to try to grind your coffee beans without a grinder. You might be better off brewing them whole.
