Strong Coffee Brewing Methods

How To Make Vietnamese Drip Coffee

A few methods exist for brewing the coffee for this recipe. These methods include:

Ca Phe Phin: Add 3 tablespoons of coffee grinds into the Phin and gently push down with the filter. Place the Phin over a cup or glass. Pour over a small amount of hot water just enough to moisten the coffee grinds. Close the lid and let the coffee bloom for 5 minutes. There should be very little, if any coffee dripping out yet. Then, pour in 1/3 cup of hot water over the bloomed grinds and let the coffee drip out slowly.

Espresso Machine: Use a double shot of espresso per serving.

Instant Coffee: Dissolve 1/2 tablespoon of instant coffee granules in 1/3 cup hot water.

If you plan to serve Vietnamese iced coffee to several people, simply grab a large glass measuring cup or bowl and scale up the quantities for making the coffee for one serving so that you have plenty brewed to make several glasses.

What Is Vietnamese Coffee

Everyone has heard of coffee from Africa and South America. However, you might be surprised to learn that Vietnam is the second largest producer of Coffee in the world after Brazil.

Whats especially unique about this is the type of coffee beans grown in Vietnam. Instead of the commonly grown Arabica bean, Vietnam predominantly grows Robusta beans.

These beans are generally considered to be of a lower quality, possessing much less desirable traits than the more expensive Arabica beans.

However, this didnt stop the Vietnamese from drinking coffee. Instead, they innovated how coffee should be brewed.

How To Make Vietnamese Coffee With Coffee Pods Or Coffee Capsules

The speediest route to making a good Vietnamese coffee is by using a capsule machine. I didnt think I would ever go down this route, but when you barely have time to brush your hair in the morning, let alone wait for your coffee to slowly drip into your breakfast mug, I think you would be forgiven for cheating.

You need a very intense coffee to stand up to the sweetness of the condensed milk, so any robust espresso capsule will work well in a cheats version. I typically use espresso or ristretto capsules with a very high intensity.

Vietnamese Iced Coffee Traditional Style Filters

We tend to be a bit obsessive over coffee. Heres some of our favorites for traditional Vietnamese Iced Coffee:

How To Make Vietnamese Ca Phe With A Vietnamese Coffee Pot

Unscrew the filter insert and remove it from the pot.

Spoon about two tablespoons of very finely ground Vietnamese coffee into the pot. If you cant find Vietnamese coffee, try Luzianne coffee with chicory. In fact, many experts claim that it isnt Vietnamese coffee without the chicory.

Replace the filter insert and screw it down tightly over the coffee grounds. This serves the same purpose as tamping the filter basket when making espresso. It compresses the coffee into a hard puck and slows the process of the water through the ground coffee, giving it time to extract all the flavor.

Pour about 1/3 of an inch of sweetened condensed milk into the bottom of your coffee glass or cup. Place the Vietnamese coffee pot over the rim of your cup or glass.

Pour one cup of water just off the boil into the pot over the filter top. Cover the pot and wait.

The coffee will take its time. More than almost any other method of making coffee save perhaps Turkish coffee, drinking Vietnamese coffee encourages a leisurely attitude. It is not coffee for the rushed and impatient. It can take ten minutes or more for the water to finish dripping through the coffee grounds into the glass, transformed into thick, rich, velvety coffee. The coffee, being of different density, simply sits on top of the milk, forming three distinct layers the creamy milk at the bottom, a very thin layer of caramel colored coffee that has dissolved some of the milk, and the thick coffee on the top.

Step 1: Add 2 tablespoons of sweetened condensed milk to a glass

Step 2: Add 2 tablespoons of ground coffee to the base of the coffee press. Wet the grounds just a little bit with some hot water.

Step 3: Screw on the press tight. The coffee should be packed well.

Step 4: Pour boiled hot water into the coffee press.

Cover with its little hat.

Step 5: Wait. It will drip veeerrrry.veeerrrry slowly. It takes 3-5 minutes to finish brewing.

The longer it takes, the stronger the coffee. Notice that there are only a few drops per second. For me, I cant wait any longer than 5 minutes. If the coffee is dripping too fast, then use a small spoon or tip of knife to screw the press on tighter, 1 turn clockwise. Or if its dripping too slow, unscrew 1 turn counterclockwise.

While its dripping, go get some ice in a glass. Youve got nothing else to do!

Step 6: Once its finished, stir well.

You can set your coffee maker on top of its overturned lid to prevent dripping onto your nice table.

Step 7: Pour over a tall glass filled with ice and enjoy!

Make Sure That You Have The Equipment

How to Make Vietnamese Iced Coffee

Once you get your hands on the perfect coffee, it’s time to find the right equipment that will help you in brewing the ideal coffee. In Vietnam, it’s called a Phin and it refers to a small metal cup, filter and lid. You put these three on the top of the cup and simply wait. You can literally see each drip dropping down in your cup while enjoying your time. It’s very easy to get Vietnamese coffee filter and I recommend you to check this one!

Vietnamese Iced Coffee With Espresso

Using Espresso: For the other Vietnamese coffee shops, youll often see espresso shots being used for each glass. Either the slow traditional filter or being made with espresso, they both make a great Vietnamese Iced coffee. For the classic coffee filter method, there is something beautiful and relaxing in having to wait for 5 minutes while the coffee brews one drip at a time. There is also something quite beautiful in quickly pulling a luscious shot of espresso and then flicking the tip of the spoon to stir in the sweetened condensed milk. Fire up the espresso machine , pull a crema laden shot of espresso and then convert it to a beautiful Vietnamese iced coffee.

The quicker, espresso method also gives the added convenience for when you want to make Vietnamese iced coffee in bigger batches. Pull a bunch of shots then stir in the sweetened condensed milk to taste. You can even do this ahead of time if needed. Then when you are ready serve ice, pour, and enjoy. Now you have a couple options to make Vietnamese iced coffee for one or for a big party. Quick or slow a meditative. Have fun and drink up while the weather is still warm so you can hydrate yourself with lots of iced coffee!

Where To Find Vietnamese Coffee

Among Asian households abroad, Trung Nguyen is a household name. Their coffee is deep-roasted, and has added hints of vanilla, cocoa, and other spices. You can find Trung Nguyen pre-ground at most Asian markets

If you dont have access to an Asian market, most grocery stores carry Cafe du Monde pre-ground. Cafe du Monde is a staple among Vietnamese-American families, but isnt Vietnamese coffee, per se. It is, however, very similar due to its dark roast, high Robusta content and use of chickory, which adds a familiar bitter bite.

Whatever coffee you use, at a minimum, you should shoot for:

  • dark roast
  • medium coarse ground
  • Robusta or Robusta-blend

How Was Vietnamese Coffee Invented

How to Make Vietnamese Coffee

Although we Vietnamese owe the availability of ingredients for this coffee to French colonization, this creation is Vietnamese. Vietnamese coffee is uniquely characterized by a combination of a dark roast coffee dripped through a metal Vietnamese coffee filter mixed with condensed milk.

More often than not, youll see this served with lots of crushed ice since it is so refreshing! You can order Vietnamese coffee hot too, but this seems to be much less popular in comparison, at least in America.

  • Made in 5 minutes, this Vietnamese iced coffee is easy and delicious.
  • Coffee is made in a French press.
  • Its sweet and creamy, with a caffeine kick.
  • No need for a Phin, a traditional Vietnamese coffee maker and filter.
  • The French press mimics the Phin by letting coffee grounds steep in hot water.
  • This recipe takes a Vietnamese coffee and adds ice to make it a Vietnamese iced coffee.

How To Make Vietnamese

To make my version of Vietnamese-style iced coffee, I start by pouring the sweetened condensed milk into a tall glass. Then, I add enough ice to fill the glass before pouring strong brewed coffee over the top. The coffee can be freshly brewed for this. You just have to vigorously stir it with the ice so that it cools down to a refreshing temperature. Next, you simply top it with whatever your favourite milk is, either dairy or dairy-free, before enjoying it! You can even add some half & half if you prefer something slightly richer in your iced coffee.

This beverage would be perfect to serve to family and friends on a patio on a hot day. Just make sure you have lots of ice in the freezer and you will be good to go!

Brewed In A Traditional Vietnamese Coffee Maker

This is a step-by-step recipe for preparing delcious Vietnamese Coffee using a traditional Vietnamese coffee maker known in Vietnam as a phin . The phin most likely originated in Cambodia in the 1800’s and is essentially a single-serving coffee brewer and filter that sits atop the coffee cup or glass.

Vietnamese coffee prepared in this way ensures the grounds of the coffee are steeped for longer than some other brewing techniques and results in a richer and more intense flavor that is delcious served either hot or iced.

Recipe Tips And Notes

  • You can pre-heat the phin for better blooming by running the phin under your boiling water before adding the coffee grounds.
  • Avoid jiggling the chamber once the coffee grounds have been added. Not only will the grounds fall out of the chambers into your cup but you might also end up plugging up the holes in the filter with the displaced grounds.
  • Feel free to adjust the amount of sweetened condensed milk. I love my coffee sweet whereas H loves his strong and dark.
  • Not sure what mug or cup to use? My small phin fits perfectly over a mason jar!

Do I need a paper filter?

No paper filter is needed to make Vietnamese coffee in a phin!

Can I add more water to the phin?

If you do two pours of hot water into the phin, the second batch will be less strong.

Can I scale this up?

You can! I usually use my 24 oz phin and place it over a pitcher. Instead of adding the sweetened condensed milk to the pitcher, I leave it out so H and I can have our preferred amount of condensed milk.

Coffee And Caffeine Content

For the most part, the longer you roast coffee beans, the less caffeine they have after roasting. But, it also highly depends on the caffeine content of the actual coffee beans.

Heres how Vietnamese coffee compares to other types of coffee in terms of caffeine.

  • Regular black coffee. It usually has less than 100 milligrams of caffeine. However, when you add espresso shots or a lighter roast, your coffee will have a little more caffeine in it.
  • Even though its supposed to be decaffeinated, most decaf coffee still has some lingering caffeine. Its likely going to have less than 10 milligrams of caffeine per serving.
  • Espresso. Made of dark roast coffee beans, espresso has a lot of caffeine in a small serving size. In every shot of espresso, you might be looking at over 100 milligrams of caffeine.

There are also other variations of Vietnamese coffee out there. If you combine regular Vietnamese coffee with a shot of espresso, you might be taking in 300 milligrams of caffeine in a single cup.
