How Are Coffee Tea And Colas Decaffeinated
Caffeine occurs naturally in more than 60 plants, including:

Several methods are used to remove caffeine from its natural sources:
- Methylene chloride processing
- Carbon dioxide processing
- Water processing
Methylene chloride is a chemical used as a solvent to extract caffeine from many raw materials. Molecules of caffeine bond to molecules of methylene chloride. The materials are softened in a water bath or in steam. The next step is to process the materials with methylene chloride by either of two methods:
- Using the “direct” method, caffeine is removed by directly soaking the materials in methylene chloride.
- Using the “indirect” method, caffeine, which is water soluble, is extracted by soaking the materials in water. Many of the flavors and oils are also extracted during this process, so the solution is treated with methylene chloride and then returned to the material for reabsorption of the flavorings.
The Benefits Of Decaffeinated
Those who avoid caffeine typically do so for the benefit of their health and wellbeing. Caffeine having the potential to exacerbate a variety of pre-existing conditions, despite having been identified as a highly beneficial substance for most people when consumed in moderation.
On the plus side, the amount of caffeine that remains in following the decaffeination process is typically too low to be of any real threat. That said, its important to acknowledge the fact that coffee does contain at least some caffeine, so it may still be necessary to consume in moderation. How Swiss Water Process Decaffeination Works
In a nutshell, the Swiss Water Process relies on caffeine solubility and osmosis to remove caffeine from green coffee beans. To begin the decaffeination process, green coffee beans are soaked in hot water to dissolve the caffeine. However, caffeine isnt the only water-soluble substance present in coffee. Sugars and other chemical components that create the flavor and aromas of coffee we love can also dissolve in water.
So, how do you decaffeinate coffee without solvents and retain the flavor profile of your favorite beans? After soaking, the water from the first round of green beans is passed through a charcoal filter. Caffeine is a large molecule and gets trapped in the filter while the sugars, oils, and other chemical elements in coffee that impart flavor and aroma pass through and stay in the water to create what is called Green Coffee Extract. This green coffee extract-infused water is now used to soak the next batch of green beans. Since the Green Coffee Extract already contains the other elements of flavor, those substances wont dissolve from the beans and just the caffeine is removed. It may sound complicated, but the result is decaffeinated coffee that is high on flavor and free from additional chemical solvents.

Caffeine Content Of Decaffeinated Coffee
To ensure product quality, manufacturers are required to test the newly decaffeinated coffee beans to make sure that caffeine concentration is relatively low. A caffeine content reduction of at least 97% is required under United States standards. There is less than 0.1% caffeine in decaffeinated coffee and less than 0.3% in decaffeinated instant coffee in Canada. To do so, many coffee companies choose to employ high-performance liquid chromatography to quantitatively measure how much caffeine remains in the coffee beans. However, since HPLC can be quite costly, some coffee companies are beginning to use other methods such as near-infrared spectroscopy. Although HPLC is highly accurate, NIR spectroscopy is much faster, cheaper and overall easier to use. Lastly, another method typically used to quantify remaining caffeine includes ultravioletvisible spectroscopy, which can be greatly advantageous for decaffeination processes that include supercritical CO2, as CO2 does not absorb in the UV-Vis range.
Both of these studies tested the caffeine content of store-brewed coffee, suggesting that the caffeine may be residual from the normal coffee served rather than poorly decaffeinated coffee.

Does Decaffeinated Coffee Have Caffeine
As I have pointed out earlier in this article even though the coffee is labeled decaffeinated coffee it doesnt mean that there is no caffeine in it. Sure, the process to remove the caffeine does do a pretty good job, but theres always some that will remain behind.
The amount of caffeine left in decaf coffee will vary from different coffee bean brands as well as the extraction process used. However, with that being said the amount of caffeine in your decaf coffee would be somewhere in the region of 0-7 mg per cup.
To give you a better idea of decaffeinated coffee vs. regular coffee, the average cup of regular coffee contains roughly 70-140 mg of caffeine per cup. So when you put the figures side by side, you can easily see that almost all the caffeine is removed from the decaf variety.

Why Is It So Difficult To Make Good Decaf Coffee
Lets start by stating a sad fact first: finding a good decaf coffee is the exception rather than the norm. The reason for this centers around two problems that are very difficult to overcome.
First, as weve already seen, the decaffeination process tends to damage many flavor compounds that contribute to the sensory character of roasted coffee.
Secondly, decaf coffees are notoriously difficult to roast. The reason for this is that decaffeinated, unroasted coffee beans start off almost brown in color rather than green. This makes it difficult for the roasters to control them, since they respond inconsistently and exaggeratedly to heat applied to them during roasting. Furthermore, they have less bound moisture content, which causes them to roast faster. So, you dealing with an unroasted green bean that tends to roast darker and faster than un-decaffeinated beans.
But all is not lost. Given what we just learned we can use this information to ensure a better decaf experience. Overall the type of roast you buy is going to have more of an impact on the taste than the decaf method. Try to avoid any decaf coffees that are really dark and oily, for you certainly dont want to add the ravages of a very dark roast to the rigors of any decaffeination process.

A Short Explanation Of Swp
This particular method of decaffeination is different from what weve so far seen in that it does not directly or indirectly add chemicals to extract the caffeine. Rather, it relies entirely on two concepts, namely solubility and osmosis, to decaffeinate coffee beans.
It begins by soaking a batch of beans in very hot water in order to dissolve the caffeine. The water is then drawn off and passed through an activated charcoal filter. The porosity of this filter is sized to only capture larger caffeine molecules, while allowing smaller oil and flavor molecules to pass through it.
Consequently we end up with beans with no caffeine and no flavor in one tank, and caffeine-free flavor charged water in another tank.
And heres where the magic happens. The flavorless caffeine-free beans are discarded, but the flavor rich water is reused to remove the caffeine from a fresh batch of coffee beans.
Since this water already is saturated with flavor ingredients the flavors in this fresh batch cant dissolve only caffeine moves from the coffee beans to the water. So the result is decaffeination without a massive loss of flavor.
Coffees decaffeinated by this method are always labeled as SWISS WATER Decaf.
This method is almost exclusively used for decaffeination of organic coffee.

Harmful To Heart Health
Per the American Heart Association, decaffeinated coffee may cause an increase in harmful LDL cholesterol. Read more about side effects of coffee here. It increases a particular type of blood fat linked to metabolic syndrome. In this study, the researchers gave participants caffeinated and decaffeinated coffee brands and coffee makers. To standardize the procedure, they gave preparation instructions. All participants drank only black coffee.
After drinking decaffeinated coffee for three months, the participants experienced a rise in ApoB a protein associated with LDL or bad cholesterol. The ApoB is the only protein attached to LDL. Research studies say that ApoB might be a better estimator of cardiovascular disease risk than ones LDL level. This protein level did not change in the other two groups.
The non-esterified fatty acids NEFA rose an average of 18 percent in the decaffeinated group, while it did not change in the other two groups. NEFA is the fuel that can drive the increase in ApoB and LDL, says H. Robert Superko, M.D., lead author of the study and chairman of molecular, genetic, and preventive cardiology at the Fuqua Heart Center and the Piedmont-Mercer Center for Health and Learning in Atlanta, Ga.

How Is Coffee Decaffeinated
Coffee “beans” naturally contain caffeine. Although a jolt of caffeine is exactly what many people are looking for when they reach for a cup of joe, the beans can be processed to remove most of the stimulant, creating a drink that can be enjoyed at night without losing sleep. There are several different methods used to rid the beans of their caffeine, all of which are done while they are still green. Decaffeination is often associated with less flavorful coffee because it is a bit tricky to remove only the caffeine and not any of the numerous flavor chemicals, and decaffeinated beans are notoriously difficult to roast properly.
The most-common methods of decaffeination involve chemical solvents, usually ethyl acetate or methylene chloride.
