  • Thoroughly clean your equipment. Leaving coffee grounds or coffee-oil buildup in your coffee maker can make future cups of coffee taste rancid.
  • Use fresh beans. Purchase your beans close to their roasting date. Try to buy your coffee in small amounts for maximum freshness.
  • Follow the Golden Ratio. Use 12 tablespoons of ground coffee for every 6 ounces of water. Adjust to taste if you prefer a stronger or weaker brew.
  • Use cold tap water. Run the tap for a few seconds before filling up your coffee maker. If your tap water doesnt taste good on its own, use filtered or bottled water.
  • Maintain a proper water temperature. That means it should be between 195 and 205 degrees Fahrenheit for optimal extraction.
  • Focus on brew time. In a drip coffee maker, the water should be in contact with the grounds for about 5 minutes. In a French press, the contact time should be 24 minutes. For espresso, the contact time is only 2030 seconds. Meanwhile, cold brew should steep for about 12 hours overnight.

    Dalgona coffee recently started trending in South Korea in February 2020. Folks started making dalgona coffee at home to replace their typical coffee shop routines. Along the way, many shared short video tutorials on TikTok and Instagram using the hashtags #dalgonacoffee and #. These videos were a hit.     The trick to this Iced Caramel Machiatto recipe is making the rich dulce de leche caramel syrup and layering the espresso and milk its way easier than you think too!

The result of that process is a rich, oily, and intense coffee that a regular brew just can’t match.     One of the first questions you should ask the barista is whether the coffee they are using for the espresso and/or drip coffee is a Single Origin or a Blend. So, let me explain what they are and we will go from there:

    Making The Iced Mocha

    This chocolate iced mocha is made very similarly to the vanilla latte, and you probably already have the main ingredient at home: cocoa powder! Make the simple syrup from the Vanilla recipe above, mix in a tablespoon of cocoa, and youre good to go. Start with an empty cup full of ice, pour your espresso shots overtop, mix in some milk and some chocolate syrup. Super easy!

    If you really want to take this iced mocha over the top, you could also use chocolate milk, or even add in a little mint extract to make it an iced peppermint mocha. Amazing combo right?! There are so many ways to get creative with iced coffee!

    How To Make It

  • Place the milk and cream in a large pot and warm them to 37 C . Remove the pot from the heat and stir in the rennet.
  • Let the mixture sit for an hour while curds form, then reheat it to 37 C while gently moving the small curds to the center of the pot. Then bring the whole mixture to just under a boil.
  • Line the strainer with the cheesecloth, and place a vessel underneath to catch the water that strains through. Pour the curds into the cheesecloth, fold the cloth around them and push hard to extract as much water as you can.
  • With the curds still wrapped in the strainer, put a heavy weight on top and let them sit and continue to drain for another few hours until you have solid cheese.
  • Place the cheese in an oven-proof dish and bake at 177 C until golden brown.
  • To make kaffeost, simply slice your cheese into cubes and add them to a mug. Pour your favourite coffee on top and enjoy. The true delicacy is the coffee-soaked cheese cubes, not the cheese-infused coffee liquid.
