To help answer this question, weve scoured the manuals of the SCA-certified coffee makers for their brew ratio recommendations before collating all the relevant data. These follow the SCA-recommended 1:18 coffee to water ratio. There is a good reason to adhere to this, too its tested by experts. Therefore, we think it represents a good starting place.

If you have a 30 cup percolator, youll need approximately 20 ½ or 21 cups of water, and youll need about 2 to 2 ½ cups of coffee grounds. This brews about 25 to 30 minutes to get all of the flavor and heat.
If youre brewing in a larger percolator, which might hold up to 100 cups of coffee, youll need 68 to 69 cups of water, and youll need a total of 6 to 6 ½ cups of coffee grounds. This size percolator will take up to 80 minutes or more before youll be able to get hot, fresh coffee. Keep in mind that the more youre brewing, the more time you need.

- Grind freshly roasted beans just before brewing. Grinding just before brewing ensures that most of the flavors remain trapped in the coffee bean, only exposing them just before you brew. Once you grind coffee beans, they lose most of their flavor in a very short time. Use an automatic or manual burr grinder to get your ground coffee.
- Use the correct water temperature. If your water is too hot, you risk burning your coffee. If its too cold, you wont get enough flavor extraction. You need to brew at the perfect temperature which is around 90 to 95 degrees C.

The amount of ground coffee you need per cup of coffee depends on the size of your cups and how strong you want your coffee. For a standard four-ounce coffee cup brewed to average strength using five ounces of water , you should use nine grams of coffee. Thats one standard level coffee scoop, or two level tablespoons.

However…a lot of coffee scoop makers are a bit sloppy with their designs. So start by using a 1 tbs kitchen measuring spoon, and make sure your scoop contains 2 tbs of ground coffee. If it doesnt, use the measuring spoon instead.
Secondly, if you want to be really precise, you can get some digital scales that are precise enough to weigh your coffee to the nearest gram, or better.
So you add…

And so on.
