Copper is a great conductor of heat and reacts quickly to temperature changes meaning it will cool quickly. Ive had espresso makers that have plastic handles that I had to be very careful with over the hot heat. My copper handle will not melt, its not hard to grasp or use like some Ive tried.

When I tested this product I placed the handle directly over the small burner , and could easily grasp the handle without any issues.

On a large burner where the heat was more intense, it was too hot to grasp. However, there would be no need to ever use this over a large burner anyway.

While aluminium may not be our first choice for kitchenware considering its propensity to corrode, we can cut it some slack if its anodized.     One thing that I must point out for those unfamiliar with stovetop espresso is this stovetop espresso is very different from the espresso made in a steam or pump espresso machine. If you were to compare the output from a super automatic espresso machine and the output from a Bialetti Moka Pot you would find the two to be totally different.

    If you were to imagine brewing the darkest and strongest coffee possible you would be getting close to moka but the character of true espresso just isnt found in moka. Its different. You dont get the crema, you dont usually get the cherry in nearly the same way, and the speed of the brewing method changes things quite a bit too.

    Make sure you go for a real espresso maker if thats what you are looking for otherwise open yourself up to something new and enjoy.
