Instant Coffee: Good Or Bad

Instant coffee is very popular in many areas of the world.

It may even account for more than 50% of all coffee consumption in some countries.

Instant coffee is also faster, cheaper, and easier to make than regular coffee.

You may know that drinking regular coffee is linked to many health benefits but wonder whether the same benefits apply to instant coffee (

This article explains everything you need to know about instant coffee and its health effects.

Tips For The Best Coffee

  • You can use instant espresso, too, but, note that it will make a much stronger, concentrated blend.
  • Start whisking as soon as you place the ingredients in a bowl for extra fluffy foam.
  • Just keep whisking. The technique wont seem to work in the beginning, but give it time. It will thicken eventually.
  • After taking pics for Instagram, give that drink a good stirring. Unlike Starbucks frappes, the foam in Dalgona coffee is very intense.
  • Use the coffee foam as a topping for brownies, pavlova, and banana bread.
  • The coffee foam stays thick and fluffy even after a while. In fact, you can store it in an airtight container and refrigerate it for up to 3 days! Or, make a large batch and freeze to make ice cream.

Why didnt the dalgona coffee recipe work?

First, check your coffee. This recipe does NOT work with ground coffee. It only works with instant.

Now, lets talk water. Remember: hot water helps dissolve both the instant coffee and the sugar more quickly, helping it whip up into its foamy state. The hotter the water, the better. You want the water to be freshly boiled.

Finally, how long and how much did you whisk for? If you didnt whisk for long enough, keep goingthe mixture will eventually thicken. If it has thickened but doesnt look as fluffy as mine, its likely that you either havent done it for long enough or havent been doing it vigorously enough. The more you whip and the faster you do it from the get go, the fluffier the coffee will be.

Why does your dalgona coffee look fluffier than mine?

Did you use a different sugar? Like I said above, this recipe works best with white sugaralthough youll still get decent results with brown sugar, coconut sugar, and some sugar alternatives, they dont whip up as airy and fluffy as white sugar.

Factors Controlling The Rate Of Physical Collapse In Coffee Derivatives

The physical collapse of instant coffee and its derivatives is strictly related to its glass transition temperature, which is the result of its formulation. Coffee melanoidins are known to be relatively low molecular weight polymers, thus showing a glass transition below room temperature . To increase the glass transition, instant and soluble coffee is generally added with high molecular weight polysaccharides ensuring the free flowing of the powder. In addition, the presence of ingredients other than coffee, such as milk derivatives, could greatly affect the caking rate. Anticaking agents, such as carbonates, silicates, and phosphates are extensively used in powdered drink due to their ability to rapidly absorb water excess or other plasticizers up to 2.5 times their weight yet remaining a free-flowing powder .

Since coffee collapse occurs when the glass transition temperature is overcome during storage, temperature and relative humidity are critical. For instance, Anese et al. reported that soluble coffee stored at room temperature at equilibrium relative humidity percentage lower than 35 is in a glassy state while over this critical value, the glassrubber transition may allow the initiation of matrix collapse. The latter is also favored by the release of water on crystallization during storage of sugar ingredients such as lactose and sucrose.

Quality Loss Of Instant Coffee During Storage

DALGONA Whipped Coffee – TikTok recipe | Instant Coffee Powder 4 Ingredient Magicâ¨

Instant coffee is very susceptible to volatile oxidation and flavor release. For this reason, considerations on coffee staling previously made for whole and ground roasted coffee are also valid for instant coffee. Indeed, the oxygen concentration in the atmosphere in contact with the product is the determining factor affecting the rate of oxidative reaction during storage. Thus, its concentration should be reduced as much as possible to increase the product shelf life. Similar considerations hold for light exposure, which is well known to further promote oxidative reactions. Moreover, being hygroscopic, instant coffee is also susceptible to the action of moisture which, as previously described, affects volatile liquid partition. An increase in moisture content to 7%8% is reported to be responsible for instant coffee caking, turning flowing powders or granules into a pastry or solid mass . In the literature it is reported that instant coffee maintains its original quality for years if the moisture content is kept lower than 4%5% w/w.

Table 4 summarizes the main indices that can be used to monitor instant coffee quality changes during storage.

The Untold Truth Of Instant Coffee

Instant coffee is a controversial choice among coffee aficionados, as many look at it as fake or weak coffee. It does have a convenience factor, though, which some companies have used to market higher-end coffees, such as Starbucks. But what is the essential difference between instant coffee and coffee made from whole beans? And what exactly is instant coffee, anyway?

Making instant coffee is faster, less expensive, and easier than making regular coffee. It is made by adding the powder to hot water, similar to making instant tea. Instant coffee is made from whole coffee beans that are roasted, ground, and brewed. Then all of the water is removed from the brewed coffee, leaving dehydrated crystals. When you add water to these crystals, it turns back into coffee .

  • Use hot water for best results. The hot water is not necessary. It will still whip up nicely with cold or room temperature water. However, I found that the hot water works faster.
  • Use an electronic mixer to make it faster. The first time I made this, I had my husband whisk it for me because my hands were tired after a couple minutes whisking. A stand mixer or milk frother work really well and theyre much faster! It will still take at least 5 minutes.
  • Whisk the ingredients in a bowl, not in a mug or jar. Thats because the dalgona coffee gets fluffy and whipped through the mixture interacting with the air. So a tall container like a mug or jar wont allow enough air to circulate around.
  • Mix the whipped coffee with a spoon or straw before sipping. Its fun to serve the whipped coffee recipe on top of the drink, but to enjoy it fully, mix it around to incorporate the flavor. It will look like a frappuccino at that point.

    Homemade Instant Coffee Mix

For someone who goes to the grocery store as often as I do, this is an embarrassing admission. But on a shockingly regular basis, I run out of not just coffee but milk for my coffee.

Sometimes its coffee, sometimes its milk. Sometimes its both. Its like a mental block that only becomes painfully clear at the bleary-eyed crack of dawn.

After hearing me whine one too many times about my sad state of affairs, my partner in crime Andrea Lynn turned me on to her emergency caffeination secret: Trader Joes instant coffee packets.

They would have been my salvation, but each tiny package called for only 4-6 fluid ounces of water. Thats only 1/2 cup to 3/4 cup, for those of you who arent fluent in conversions like I am.

And that is simply not enough coffee for this girl. Im a self-employed small business-owning boss lady hustler, for petes sake! Dont you know were all fueled by coffee and angst?

Clearly some DIY deconstruction had to be done. Otherwise Id burn through the instant packets too quickly and be in a worse situation than ever: no coffee, no milk and no faux milk either.

The simplest solution would be to grab a jar of instant coffee and a canister of powdered non-dairy creamer, which would be fine for the majority of the population.

But not for me. Homemade instant coffee mix was the only way to go here.

The following homemade instant coffee mix recipe is so versatile that it can work for any way you like to store and serve your emergency coffee.

    Instant Coffee Vs Espresso Powder

Espresso powderor instant espressois very similar to instant coffee, but it’s stronger and is often made from a better quality coffee. It’s usually made from darker roasted beans with a higher percentage of Arabica beans in the blend, resulting in a darker, smoother taste. It’s also usually dried with the freeze-drying method to preserve flavor.

You can substitute instant coffee for instant espresso in recipes by using 50 percent more than the recipe calls for. But be warned, it may have a harsher taste than it would if you use espresso powder. Adding a little extra sugar can help counteract unwanted bitterness from instant coffee powder.

The Truth About How Instant Coffee Is Actually Made

In this day of coffee elitism, the instant choice is not typically heralded. But that doesnt mean instant coffee doesnt have its fans many of our parents, for example, willingly drinks the stuff every single morning.

While instant coffee is a godsend in baking for its strong flavor, dry texture and ability to dissolve, most of us know that it tastes inferior to freshly ground beans. But how many of us know what it actually is? Its been around for over a hundred years, so it might be time we all finally found out.

First, the obvious: instant coffee is in fact made from real coffee. Whole beans are roasted, ground and brewed before they start their journey to becoming instant. What makes coffee instant is when all the water is removed from the brewed product, leaving behind dehydrated crystals of coffee. To make it coffee again, you just add water.

There are two ways to make instant coffee: spray drying and freeze drying. Spray drying is achieved by spraying liquid coffee concentrate as a fine mist into very hot, dry air . When the coffee hits the ground, the water has been evaporated and it has dried into small, round crystals.

Antioxidant Potential Of Instant Cappuccino Brews

How to Make Whipped Coffee or Dalgona Coffee- 3 Ingredients!!!

Besides coffee, instant cappuccino brews are also often consumed and can be prepared either by brewing with water or milk, depending on consumer preferences. Niseteo et al. determined significant differences in the TPC of water-prepared instant cappuccino brews, with regards to the cappuccino composition . In contrast to the results obtained for coffee brews prepared with the addition of milk, instant cappuccino brews made with milk exhibited higher TPC than those made with water. This observation was, however, attributed to the presence of milk-derived compounds, which can directly interfere with accurate polyphenol determination by reducing analytical recovery, causing overestimation of milk-prepared cappuccino brews. This was also applicable to the antioxidant capacity of cappuccino brews. Additionally, it was observed that instant cappuccino brews provided higher caffeine content than decaffeinated coffee brews, almost comparable to regular espresso brews, and depended on the content of instant coffee in their composition. As can be seen in Figure 10.2, the ranking of antioxidant capacity of instant cappuccino brews corresponded to the TPC, CGA derivatives, and caffeine content. Therefore, it can be concluded that instant cappuccino brews also provide a substantial amount of polyphenolic antioxidants and caffeine, in the range of decaffeinated and filtered coffee.
