I get a huge thrill as I watch my students amazement when they learn how to roast coffee beans. They heat up the roaster, load in the beans, and then smell the sweetness of the beans sugars caramelizing. And their concept of coffee changes drastically.
You can have that same coffee roasting experience at home.
Its not a long process. In fact, coffee beans roast rather quickly you can have a light roast in a home coffee roasting method in less than 10 minutes. That also means you need to keep a sharp eye on those beans dont get distracted or you may have charcoal!
First lets go through the coffee roasting stages so you know how to roast coffee beans and what to expect when you roast coffee at home.
Listen To The Popping And Crackling Sounds
The color of the beans is just one of the ways to determine the degree of roast. I have read that experienced roasters also monitor the aroma and the size of the bean.
However, there is another, perhaps, easier way to determine the readiness of the beans.
It is by cracking sound you hear during roasting. That cracking sound similar to a popcorn popping sound.
This sound is also known as the first crack;and the second crack.
This series of cracks will last about 1-1.5 minutes and have a 1-2 minute gap between the first and the second crack. It all depends upon the type and also the amount of beans being roasted. During the process, when the coffee bean starts to expand and its moisture has begun to evaporate, you should hear this cracking sound, and that will happen twice.
When using an air fryer, you should hear the first popping sounds around 8-9 minutes of roasting. That is the moment when beans have reached the early stage of edibility at the light-medium brown color.
Now, if you keep roasting up to 10 minutes, then medium to dark roast will be reached and ready, which is somewhere in between the first and the second crack, which should happen just around the 11-minute mark.
However, if you want to go even darker roast, then keep going 1-2 minutes more. Now you should be reaching into the dark brown territory. However, that is the stage that I was struggling to reach with my air fryer.

A NOTE OF SAFETY: Coffee beans will get very hot. I recommend using hand and eye protection while roasting. Additionally, it will get very smoky when roasting coffee and oils may be released into the air. Its best to roast coffee outdoors if at all possible. If you cant roast outside, make sure your area is VERY well ventilated.
Remember, when learning how to roast coffee, there are several ways to do it, but the process is similar for each method. Here are several to choose from:
Cast Iron Pan On a Grill or Stove Top
Cast iron holds its heat well and heats evenly, making it a top choice for roasting coffee. I prefer to do mine on the grill, but you can do it on your stove top if you wish. Ceramic coated or stainless steel pans work well too, just dont use anything non-stick or coated. The heat must be very high and it can be toxic to heat non-stick pans that much.
Cookie Sheet In The Oven
This method works well too, but there is a lot of stirring and smoke involved. Its not as easy to roast coffee this way, but it can be done.
Hot Air Popcorn Popper
Stove Top or Manual Popcorn Popper
Similar to the hot air popper, stove top poppers work well too. But you do need to manually crank it to move the coffee beans around.

When youre roasting coffee beans at home, there are two important cracks you have to listen for.
Thefirst crack is a sign that the beans have begun a light roast. The crack happens because most of the water in the bean has evaporated, which happens when the bean reaches a specific temperature .
If you like a lighter roast, youll probably want to take your beans out not too long after you hear the first crack. Once you hear the second crack youve pretty much already burned your beans. So you dont want to hear that unless you like them REALLY DARK!
Anything between the two cracks is considered a light to medium roast. It all depends on how long after the first crack you take them out .
