How Is Coffee Decaffeinated

Coffee Without Caffeine | Greg Foot | Earth Lab

There are a few different processes for decaffeinating beans, each of which uses an element to draw out the caffeine from the beans. The three most commonly used processes are the solvent-based process, the Swiss water process, and the carbon dioxide process. Each such decaffeination process is used today to remove as much caffeine as possible from the beans.

The solvent-based process uses a solvent made from methylene chloride, ethyl acetate, and water are used to draw out caffeine from presoaked, unroasted beans, after which the solvent evaporates leaving the coffee bean with a lot less caffeine. The decaffeination agent, like methylene chloride or ethyl acetate, pulls the caffeine out of the green coffee beans while they soak in the solution Do Cappuccinos have caffeine in them?

The Swiss water process is the most effective and only organic way to decaffeinate coffee beans. This process uses osmosis to extract the caffeine from unroasted coffee beans, leaving them up to 99.9% free of caffeine .

The carbon dioxide process is the newest of the lot. It uses the CO2 that naturally exists in the beans to remove the caffeine. This process of using carbon dioxide leaves the flavor of the coffee true to the original, but conducting it is expensive.

Why Is It So Difficult To Make Good Decaf Coffee

Lets start by stating a sad fact first: finding a good decaf coffee is the exception rather than the norm. The reason for this centers around two problems that are very difficult to overcome.

First, as weve already seen, the decaffeination process tends to damage many flavor compounds that contribute to the sensory character of roasted coffee.

Secondly, decaf coffees are notoriously difficult to roast. The reason for this is that decaffeinated, unroasted coffee beans start off almost brown in color rather than green. This makes it difficult for the roasters to control them, since they respond inconsistently and exaggeratedly to heat applied to them during roasting. Furthermore, they have less bound moisture content, which causes them to roast faster. So, you dealing with an unroasted green bean that tends to roast darker and faster than un-decaffeinated beans.

But all is not lost. Given what we just learned we can use this information to ensure a better decaf experience. Overall the type of roast you buy is going to have more of an impact on the taste than the decaf method. Try to avoid any decaf coffees that are really dark and oily, for you certainly dont want to add the ravages of a very dark roast to the rigors of any decaffeination process.

Use An Aromatherapy Diffuser In The Morning

Kirkpatrick pointed to a 2018 study that found aromatherapy can decrease fatigue. She recommended using lavender-scented oils in the morning before work, when you are getting ready or eating breakfast to prepare you for the day ahead.

Other aromas can also have a powerful effect. The scent of rosemary has been found to make people more alert, Dr. Uma Naidoo, director of nutritional and lifestyle psychiatry at Massachusetts General Hospital, noted in her book This Is Your Brain on Food.

I feel sharper and calmer all at once, Naidoo wrote, describing how she feels after running her fingers down a sprig of fresh rosemary to release the aroma.

Sage, whether fresh, dried or in the form of essential oils for aromatherapy, can also make people feel more alert, she wrote.

Theres also a small but significant reduced risk of premature death and Type 2 Diabetes.

Reduces the Risks of Aging and Neurodegenerative Diseases

Regular and decaf coffee is linked to preventing ageing and neurodegenerative diseases such as Alzheimers and Parkinsons.

Much like decafs effect on the liverenzymes, it also has the same protective effect on brains neurons, which iswhy it could prevent the onset of the neurodegenerative disease. Another studyalso suggests that the reason for this is the chlorogenic acid found in coffee, rather than caffeine, thats responsible for this protective effect.

Does Your Body Notice The Amount Of Caffeine In Decaf

Although there is some caffeine in decaf coffee, the small amount of caffeine isnt really enough to affect most people, Sampat said. But that also depends on a few factors: Those include caffeine sensitivity and caffeine tolerance .

People who are mildly or moderately sensitive to caffeine and/or consume caffeine regularly are unlikely to be affected by the small amount of caffeine in decaf, Sampat told SELF. For the minority of people who are really caffeine sensitive, even that small amount can be a lot.”

If youve ever noticed negative side effects of caffeine such as a quickening heart rate or feeling jittery, anxious, nauseous or restless, according to the U.S. National Library of Medicine after a cup of decaf coffee, you may be sensitive to caffeine, per the SELF article.

“The tiny amount of caffeine in decaf could also be a potential issue for anyone trying to avoid or minimize caffeine intake due to a medical condition. That may include people with sleep disorders like insomnia, various liver diseases that cause impaired liver function, and migraine in which caffeine is a trigger, Sampat told SELF. And although caffeine can also potentially interfere or interact with various types of medications, Sampat said, its worth noting that these interactions have typically been observed with standard doses of caffeine, not the much smaller quantities found in decaf.

What Are The Advantages And Disadvantages Of This Process

The main advantage of the Swiss Water Process is that it is completely natural.

It does not require the addition of any chemical solvents at any stage of the process to remove the caffeine.

This is one of the main reasons that this method is used almost entirely for decaffeinating organic coffee.

This makes it sound like the ideal method but there are also a couple of disadvantages.

The Swiss Water method is expensive. It is a time-consuming process for decaffeinating coffee, but also, the caffeine caught in the filters cannot be retrieved and resold as it is in other methods, making this method less profitable.

Some people also consider that coffee beans decaffeinated in this way have an inferior taste to beans decaffeinated using more traditional methods.

It can be a question of balancing a slightly inferior taste against the appeal of using a completely natural method for removing the caffeine.

If You Were To Try And Decaffeinate Roasted Coffee Youd End Up Making Something That Tastes A Bit Like Straw Chris Stemman

You might think that it would be easier to roast the coffee, grind it into the required powder and then begin the decaffeination process. Not, so says Stemman.

It takes place when the coffee is green, before roasting.

If you were to try and decaffeinate roasted coffee youd end up making something that tastes a bit like straw. So thats why with 99.9% of decaffeinated coffee to this day, the process is done at the green coffee stage.

There are several ways to decaffeinate coffee but the most prevalent is to soak them in a solvent usually methylene chloride or ethyl acetate. Methylene chloride can be used as a paint stripper and a degreaser as well an agent to remove caffeine.

Caffeine has to be taken out of coffee beans before they are roasted

Ethyl acetate, meanwhile, is a natural fruit ether usually made from acetic acid the building block of vinegar and its also used to make nail polish remover .

The beans are first soaked in water and then covered in a solution containing either of these solvents. The caffeine is then drawn out by the solvent.

The solvent-laced water is then reused again and again until it is packed with coffee flavourings and compounds pretty much identical to the beans, except for the caffeine and solvent. By this stage in the process the beans lose very little flavouring because theyre essentially soaked in a concentrated coffee essence.
