There are a few different processes for decaffeinating beans, each of which uses an element to draw out the caffeine from the beans. The three most commonly used processes are the solvent-based process, the Swiss water process, and the carbon dioxide process. Each such decaffeination process is used today to remove as much caffeine as possible from the beans.

The solvent-based process uses a solvent made from methylene chloride, ethyl acetate, and water are used to draw out caffeine from presoaked, unroasted beans, after which the solvent evaporates leaving the coffee bean with a lot less caffeine. The decaffeination agent, like methylene chloride or ethyl acetate, pulls the caffeine out of the green coffee beans while they soak in the solution Do Cappuccinos have caffeine in them?

The Swiss water process is the most effective and only organic way to decaffeinate coffee beans. This process uses osmosis to extract the caffeine from unroasted coffee beans, leaving them up to 99.9% free of caffeine .

The carbon dioxide process is the newest of the lot. It uses the CO2 that naturally exists in the beans to remove the caffeine. This process of using carbon dioxide leaves the flavor of the coffee true to the original, but conducting it is expensive.

Why Is It So Difficult To Make Good Decaf Coffee

Lets start by stating a sad fact first: finding a good decaf coffee is the exception rather than the norm. The reason for this centers around two problems that are very difficult to overcome.

First, as weve already seen, the decaffeination process tends to damage many flavor compounds that contribute to the sensory character of roasted coffee.

Secondly, decaf coffees are notoriously difficult to roast. The reason for this is that decaffeinated, unroasted coffee beans start off almost brown in color rather than green. This makes it difficult for the roasters to control them, since they respond inconsistently and exaggeratedly to heat applied to them during roasting. Furthermore, they have less bound moisture content, which causes them to roast faster. So, you dealing with an unroasted green bean that tends to roast darker and faster than un-decaffeinated beans.

But all is not lost. Given what we just learned we can use this information to ensure a better decaf experience. Overall the type of roast you buy is going to have more of an impact on the taste than the decaf method. Try to avoid any decaf coffees that are really dark and oily, for you certainly dont want to add the ravages of a very dark roast to the rigors of any decaffeination process.

It does not require the addition of any chemical solvents at any stage of the process to remove the caffeine.

This is one of the main reasons that this method is used almost entirely for decaffeinating organic coffee.

The Swiss Water method is expensive. It is a time-consuming process for decaffeinating coffee, but also, the caffeine caught in the filters cannot be retrieved and resold as it is in other methods, making this method less profitable.
