For many generations of Fort Worthians, Paris Coffee Shop has been more than a coffee shop. Since opening in 1926, it has become one of the citys cultural landmarks, especially for families, who pass it down, one generation to the next, like a family photo album.

Thats one of the reasons why Mona Owens jumped at the chance to work at the revamped Paris Coffee Shop, which is slated to reopen in late May. In spring 2020, her son, Chris Reale, announced he and his business partners, well-known restaurateur and chef Lou Lambert and developer Mark Harris, were going to buy and revamp the historic restaurant.

Like many in Fort Worth, Owens had a strong connection to Paris so much so that she wanted to be a part of its rebirth.

That was one of my father-in-law’s favorite restaurants, she says. We would meet him and his family there regularly. I love that so many generations of people go there, and they pass it on to the next generation, and so on. When I heard Chris had put in a bid on it, I told him my husband and I wanted to be a part of it. I told him, Wed love to run it for you guys.

Long-timers will recognize most of the staff, including the servers, most of whom will be returning.

Lighter options will consist of a lemon Caesar salad, shrimp cocktail, and a pesto hummus with grilled pita and fresh veggies.

Its Owners Talk About How To Keep A 95

The most important challenge of reinventing an old restaurant, says Fort Worth chef and restaurateur Lou Lambert, is embracing the heritage.

Theyve done that at Paris Coffee Shop, the 95-year-old diner in Fort Worth that reopened on Thursday, May 19, 2022, after eight months of renovations.

Weve been listening to clients who have been here for generations, while also working to make it relevant to a new generation, Lambert says.

Lets look at the history: Paris Coffee Shop opened in 1926 and was started by a man named Vic Paris. He sold it quickly to Greek man named Grigonos Asikis , and the Smiths ran it for nearly 100 years. During that time, the restaurant was moved in the 1970s into its current location, on W. Magnolia Avenue, taking the place of a Safeway grocery store.

Lambert and his business partners Chris Reale and Mark Harris scooped up the aging diner in early 2021.

That same trio also bought and reinvented Roy Pope Grocery, Fort Worths seventh-oldest restaurant and market, dating back to 1943.

Paris Coffee Shop would have likely been torn down and become the site of an apartment complex if they didnt buy it, Lambert hypothesizes. Today, Magnolia Avenue is a busy, sought-after street in Fort Worth.

Me and Lou, coming from a culinary background, we really wanted to go back to scratch cooking, Reale says.

    What worked?

Original kitchen equipment from the ’70s like the griddle. “To me, it’s part of the nostalgia of what Paris was and is. We want to reintroduce that and train our staff on this,” Reale said. The majority of the kitchen staff knows how that griddle works because 80% are still there including Cleveland Arner, handpicked to carry on the pies Mike Smith made famous.

“One of the things people really enjoy are my pies. They’re all homemade pies,” Smith told NBC5 in April 2021 as he talked about the pies with meringue piled high. “I’m known for pies all across the United States.”

Servers whose smiles customers have seen for years returned. Trubie Wickersham, Sue Fern and Rainey Noblett combined have worked at Paris for almost five decades. Reale’s mom Mona Reale Owens, a veteran of the restaurant industry, is the manager and trained the servers on a new computer system that will make their job easier and give diners a better experience.

Countertop service where folks belly up to the bar for a home-cooked meal is still part of the new Paris.

“We’re still gonna have all the original blue breakfast items. So nothing’s going away. We’re still gonna have blue plate specials every day but again, we gotta make new, so we’re gonna add a dinner service and we’re also gonna be open seven days a week,” Reale said.

And, for the first time in 96 years, Paris now serves alcohol.

“Everything is our attempt to make this thing relevant and give it all the respect it deserves,” he said.

Food was good. Like new and clean setup. Needs some TCU vibe added back in, but otherwise very good.

This is a Fort Worth landmark. Ive heard about it for years. I had a chance to check it out this week and while the service was great, the food was meh. Heavy, doughy pancake, sausage was unremarkable. Eggs were cooked to order. $3 for…a small glass of OJ seemed kinda steep. Wont be rushing back.More

the new cook doesn’t know how to make biscutts or gravy. This was the best breakfast in town till Smith sold it. It is all new and clean but food is terrible.

We decided to try the new Paris Coffee Shop for Saturday lunch. The space is great and the food was good. The service was terrible. The place had an abundance of wait staff members, but our server Angela was MIA.. We had to ask another…server to take our order, so she went to get Angela. After taking our order, Angela appeared at the table once or twice then disappeared. The seating hostess cleared our plates and we had to get up to ask the hostess to bring our check. This was not a good first experience. The seating hostess was very nice and apologized profusely.More
