Key Steps To Better Cold Brew At Home
- Get the grind right. Cold brew requires a specific grind. A larger grind something closer to the coarseness of raw sugar keeps the brew from getting bitter overnight. If youve got a small home grinder, its best to grind the beans in batches.
- Use a higher ratio of coffee to water. This recipe uses a ratio of 8 ounces of ground coffee to 8 cups of water which is 1 ounce of coffee per cup making it easier to scale this recipe up or down. Drip coffee uses about 1/2 ounce of coffee per cup.
- Strain slowly. The Toddy System that Starbucks uses to brew and strain their coffee relies on gravity to gently remove the cold brew from the grounds. To replicate that at home, youll need to strain the cold brew gently through cheesecloth and a strainer. Avoid pressing or squeezing the coffee grounds, as that extracts bitter flavors. Work in batches to strain as gently as possible. You might be asking yourself, Cant I just strain the coffee with a coffee filter? You could, but it slows the straining process and occasionally the paper filters tear, creating more of a mess than anyone should have to deal with before coffee. My favorite tool for straining my cold brew is actually a nut milk bag.
What Ingredients Are In Masala Chai
Classic masala chai is made using a black tea like Assam. It is infused with cinnamon, ginger, cardamom pods, cloves, peppercorn and star anise.
Often masala chai is made into a latte by adding a lot of milk and sweetener. The result is a very satisfying spicy, yet sweet tea drink.
Not surprisingly, Starbucks chai tea lattes are based on a similar flavor profile.
The Nine Stages Of Manufacturing Instant Coffee
Stage one: Delivery
Raw, green coffee beans enter the Nestlé factory by lorry up to four times a day. It takes more than two hours to unload the 27 tonnes of green coffee that are inside each of the four lorries.
The coffee is then sieved and cleaned by machine to remove any unwanted debris that may have found its way into the batch of beans.
Stage two: Roasting
Next comes the roasting of the beans to turn them from their original green colour to the more familiar brown. For Nescafé Gold, a blend of five different beans, weighing 420kg in total, is added to a giant roaster.
The beans are heated to 230°C to produce a medium roast which, the company says, is great for drinking both with and without milk. After 10 minutes of roasting, the beans are then rapidly cooled to 40°C to avoid further cooking from the residual heat.
Stage three: Grinding
The roasted coffee beans are now sent to be ground in an industrial roller-mill grinder. This is not the sort of grinder youll find on the home kitchen counter. Its capable of grinding a staggering 1,500kg of coffee per hour.
When coffee is ground, a lot of the aromas are lost into thin air. To minimize the loss, the aromas are collected by pumping nitrogen gas through the grounds, capturing the aromas on its way through. The vapour is then stored in a tank to be added later on.

So which is the best decaf process for you? Well the jurys out on that one. IF you dont dig the direct method with methylene chloride you might want to try a good Swiss water processed coffee like No Fun Jo. If you are feeling trendy you can try the supercritical CO2 process. The downside with these are the mixed reviews and price. Overall these seem to be the most expensive decafs and generally hard to find.
Whats the difference in these? Overall not much. Each process involves soaking the beans to remove the caffeine and then filtering it out before the coffee water is added back in. I would tend to believe most of these methods do damage the flavor a bit. Overall I would say try many and see what you like. Brew method will affect the taste as well so I would advise brewing auto drip, Chemex and french press before deciding what you do or do not like. Each method will highlight a slightly different nuance to the coffee with the french press method likely giving you the truest impression of the coffee. I know when I follow the cupping procedures form SCAA it reveals a lot more of the nuances of the coffee versus when I just brew a pot of Chemex or auto drip. There are pretty varied options on what process is the best and leaves the most flavor. Truthfully I would guess its probably the direct method with methylene chloride myself. I am curious to try a supercritical CO2 processed coffee just because it sounds cool

What Is Instant Coffee

The History Of Instant Coffee
The first soluble instant coffee was invented in 1899 by David Strang of Invercargill, New Zealand. Until recently, Japanese chemist Satori Kato was wrongly credited with the invention with his version in 1901.
Before 1899, there were several incarnations of a form of instant coffee, but nothing like we would recognize today. Starting in 1771 in Britain, this was called a coffee compound and even received a patent from the British government.
Next came an American version created in 1851. Used during the American Civil War, cakes of instant coffee were rationed to the soldiers and proved to be extremely popular for morale.
Instant coffee gained further traction when British chemist, George Constant Louis Washington, helped to commercialize Satori Katos coffee through his work in Guatemala.
However, George Washington coffee was viewed somewhat as a novelty and people didnt much enjoy the taste. Tweaks were also needed as the coffee didnt dissolve very well, adding to its unpopularity.
Things really took off when Nestlé got involved in 1938. Having been approached by the Brazilian Coffee Institute in 1930, Nestlé was asked to create a flavoursome, soluble coffee using Brazils huge surplus of coffee both to decrease spoilage and boost the Brazilian economy.
Nestlé agreed and spent the next seven years working on an instant coffee that delivered in both its flavour and its solubility.

Light Roast Vs Dark Roast
One of the most common myths among coffee drinks is that dark roast coffee contains more caffeine and is, therefore, stronger than light roast coffee. The reasoning behind this is that the longer you roast coffee beans, the more caffeine you get from them. Other people also argue that light roasts are stronger than dark roasts since some caffeine is lost during the roasting process. Unfortunately, these are not true.
This is because for there to be any changes in caffeine content, the temperature when roasting must exceed 600°F. Since roasting beans would rarely require you to exceed 470°F, thats not possible.
Hence, experts have come to the conclusion that a beans caffeine content remains constant across different roast levels, unless, of course, you attempt the unreasonable and roast it well over 600°F.
So, what does this tell us?
This just shows that choosing either light roast or dark roast instant coffee wont do you any good if your goal is to make a stronger instant coffee. There are, however, some brands that are stronger than others.
