There are two boilers inside the Lelit Bianca. One boiler is for frothing milk and the other is for brewing espresso.

This allows for simultaneous steaming and brewing, so milk-based drinks like lattes can be created quickly. Dual boiler designs can be more expensive and take longer to heat up initially, but they have the benefit of providing a lot of steam power.

The Profitec Pro 800 has a single heat exchange boiler. This doesnt mean that it cant brew and steam at the same time like the Lelit Bianca can. In fact, it has no problem with this, thanks to a copper tube running through the boiler that delivers brewing water to the group.

Heat exchange boilers are oftentimes more affordable than dual boilers and theyre more energy-efficient since they dont have to keep two boilers up to temperature. The drawback is that, depending on the size of the boiler in question, the machine may not offer the same amount of steam power as a dual boiler machine.

Rotary Vs Vibratory Pump

Getting past their superficial differences, lets take a look at the actual hardware of these espresso machines. One major difference between them is their pumps.

The Lelit Bianca has a rotary pump. Rotary pumps are prized because they are quiet and long-lived. While not totally silent, it will not be as loud as other espresso machines youve likely experienced before.

Within the Profitec Pro 800, youll find a vibratory pump. Vibratory pumps are louder than rotary ones, but they are still not without their own merits. For instance, they tend to be less expensive than rotary pumps, and they also take up less space.

Depending on the availability of a water line, the Pro 800 can be plumbed directly into your water line or draw water from the 3 liter water reservoir. To prevent the boiler from running dry, the machine is fitted with a microprocessor that controls volume in the water reservoir and the boiler. The machine will automatically alert you if it needs to be refilled.

High Capacity Copper Boiler

Brew water is supplied by the Pro 800’s absolutely massive 3.5 liter copper boiler for near endless water while pulling shots. Copper is known for its superior heat retention and is an ideal choice for boiler material.

Boiler Pressure Gauge

As a lever style espresso machine, the Pro 800 has only a single gauge on the bottom right of the machine to monitor pressure inside of the boiler.

Concealed PID Temperature Controller

To help preserve its elegant simplicity as a lever group machine, the Pro 800’s PID is hidden behind the drip tray, underneath the boiler pressure gauge. With the PID you can monitor the temperature inside of the boiler and adjust brew temperatures to satisfy your extraction parameters.

LEVER OPERATION

NOTE: Keep a firm grip on the lever! Never allow the lever to return to its upright position on its own if there is no portafilter/coffee offering resistance. Cleaning And Maintenance 35/5

Compared to an appliance-grade espresso machine, caring for a prosumer espresso machine takes a bit more work. Then again, they also last much, much longer. So your work is well justified.

As Ive said, the Pro 800 is remarkably well built. So while day-to-day cleaning is a must, maintenance over the machines lifetime should be pretty minimal. And what maintenance is required will be relatively easy and inexpensive.

In regards to cleaning, its the same as with any high-end machine. Dont worry the lever doesnt add any extra work.

Keep the outside surface looking its shiny best by giving it a quick wipe down with a microfibre cloth each day. Keep the inside tidy by backflushing regularly with water and less regularly with cleaning solution. And of course, always use filtered water in your espresso machine to avoid the build-up of scale and to have the best-tasting espresso!

Please note that the single boiler dipper system is better than comparable dual boilers when it comes to maintenance. In a typical steam boiler, water only leaves the boiler as steam. The steam leaves behind any solid materials, causing the boiler to need regular descaling. On the other hand, with the single brew boiler system here, the water in the boiler is constantly refreshed, so the build-up of minerals is far less.

Brewing With A Lever Machine

  • Once your PID displays the set temperature you are ready to begin brewing.
  • It is important to note again, the grouphead contains a powerful spring, keep a firm hold on the lever to avoid injury or damage to the machine.
  • You will “pull” a shot by bringing the lever into a downward facing position, firmly holding it the entire way down. Hold in the down position for 2-4 seconds.
  • You will firmly guide the lever back into its upright position only releasing once it is almost in a fully upright position.
  • Bringing the lever down fills the group chamber with water from your boiler, the temperature is maintained by the physical properties of the flow of water into the group and materials of the grouphead itself.
  • The 2-4 seconds in the lower position will determine the amount of water that fills the group chamber and ultimately the total volume of water that will flow through the entire shot.
  • The action of the spring as the lever moves back into the upright then into its resting position produces the ideal 9-10 bars pressure for brewing.

If all the Lelit Bianca gave you was the flow profiling paddle, you might struggle to use it. When you found a position that produced your favorite flavor, youd have to try and remember exactly where that position was.

To make matters simpler, the Bianca has a pressure gauge built right into the group head. As you adjust the paddle, you can confirm what the pressure level is simply by looking at the gauge. That way, if you wanted to repeat a previous shot, all you need to do is confirm what the pressure is with the gauge.
