How To Make Great Coffee: An Overview
There are four main steps in making a great coffee: the grind, the pour/extraction, texturing/heating the milk, and then pouring the milk.
The grind is the first step a lot of people fall over. Many have the grind level set by the coffee company or serviceman, then never adjust it.
The grind needs to be set every day since the weather can have an effect on the grind. A good barista will check the grind each morning by making a few coffees before the store opens and adjusting the grinder accordingly. Throughout the day, the barista will continue to make minor adjustments. I will go into more detail soon.
Now the pour partly depends on the grind and the tamp. Most machines are automatic these days, so the size of the shot of coffee should be already set and therefore, will not be a variable at this stage. Now you want to end up with a beautiful golden even-looking crema, the golden-brownish foam that covers a freshly-brewed cup of espresso, created by the high pressure of the water being forced through the coffee grounds. If your coffee does not have this golden crema on top, you need to start again, as your coffee will not be nice at allit will be either bitter or weak. Again we will go into more detail in the next section.
The milk needs to be smooth, silky, and not too hot. Like the grind, this is a step that many people fall over. They end up with an airy bubbly mess of boiling-hot tasteless milk that ruins the coffee.

Tamp Evenly And Consistently
I had my first barista training in 2012 when I was taught that I should tamp with 20 kilos of pressure. After a few tamps and several years, I still dont know how much is 20 kilos of pressure. So lets kill that popular myth.
So lets tamp in a more modern way. The aim of tamping is to remove any air pockets in the coffee puck and do this so that the puck is completely leveled. Tamp so long and hard that you feel that the puck is compressed . Pay attention that the puck is horizontally leveled so that you avoid channelling and over, under or uneven extraction.

2. Pour the fresh coffee into the filter and level the bed of grounds by gently shaking.
3. Slide the funnel into the funnel rails.

How To Make Filter Coffee
1. The picture below shows a South Indian coffee filter which makes for 2 to 3 tumblers of this drink. It comes in various sizes.
2. The parts include two cylindrical vessels. The top vessel has perforations in it and it fits into the lower vessel which collects the coffee brew. There is also a pressing disc with a handle and a lid.

What If I Am Making Turkish Coffee For Multiple People With Different Sugar Preferences
If this is the case, you can do one of two things. First, you can make them in different pots, but for that, you would have to have more than one cezve.
Second, you can start making it with no sugar, pour the first pour to all the cups and then add in the sugar in the second pour.
For example: Lets say I making Turkish coffee for 2 of my guests. First, start with the person who wants his sade and then continue with the second person who wants his orta . Below are the steps I would follow to make them at the same time in one pot :
- Start by cooking water and coffee for 2 servings with no added sugar
- Pour your first pour halfway into two coffee pots.
- Boil the second pour and fill up the first serving with no sugar.
- Then add in sugar into the pot, mix it, and bring it to a boil before you top off the second serving. Since Turkish coffee is pretty thick and served in such a small cup, it will have enough sweetness.
Be Aware Of The Yield & Brew Time
Now you are brewing your espresso. If you are using a volumetric machine, be aware of you brew time. In the case of too short extraction time or too long extraction time you might want to make a new espresso and/or check your grind size and dose. If you are using a manual espresso machine, be aware of your yield e.g. if your espresso is running a bit too fast, you are just diluting your espresso and possibly also over-extracting at the same time.

When making any coffee beverage, you need to know the dose of dry coffee grounds, the amount of water, the extraction time, and the final volume. All these factors are related and, with espresso, you can actually ignore the water volume for now.
Lets break it down:
- A generally good starting place for extraction time is 25 seconds. Stick to this until youre ready to experiment with espresso recipes.
- The amount of dry coffee grounds will vary depending on your espresso basket, but youll probably be using 810 grams per single dose.
- A single espresso shot is generally 2535 ml, which should easily be achievable with these parameters.

However, remember that these are flexible guidelines, not hard-and-fast rules. Every coffee is different. Some will taste better with a shorter extraction time, others with a slightly longer one. Roast profile and grind size will also affect the best parameters.
