Wait For The Water To Go Through
After the last pour, all you have to do is wait for the water to run through completely.
The entire brew process should take between 3 ½ and 4 ½ minutes. Total brewing time is essential because when the brew time is too short, you will have under-extracted coffee, and when the brew time is too long, you end up with over extracted coffee.
If your brew process took far longer than 4 ½ minutes, try a coarser grind to allow the water to run through faster. If your brew time is considerably shorter than 3 ½ minutes, try a finer grind to prevent the water from running through as quickly.

St International Chemex Cup Winner Recipe
The 2017, as part of the Berlin Coffee Festival, the first international Chemex Cup was organized. The winner of the gold Chemex, Haider, shares his recipe and method in the video below. Also a nice look at the great atmosphere at the Berlin Coffee Festival.
If the videos above teach us anything, it is the value of experimentation. There are some many ways to make great coffee with a Chemex. Just make sure you stay close to the recommended coffee to water ratios. Tweak as much as you like. Playing around with pour over coffee is part of the home barista lifestyle!

Measure And Grind Your Coffee
First, measure out 2 tablespoons of coffee beans for every 6 ounces of water. To make a 32-ounce Chemex, we’ll use 10 tablespoons of coffee. Or you can skip the math altogether and simply use one Bean Box Sampler Bag for a 6-Cup Chemex!
Grind the coffee to a table salt-like consistency so the beans can fully absorb the water. This grind gives you a cleaner cup of coffee with less sediment when using a Chemex.
Add Coffee And Let It Bloom
The next step is to grind your coffee to a medium-course grind size. Pour the ground coffee in the filter and gently shake the Chemex to level to the bed of coffee grounds. This allows for a nice and even pour and extraction.
Next, is the bloom.
The bloom allows carbon dioxide that got trapped in the beans during the roasting process to disperse, and it provides for a nice even saturation during the rest of the brew time. For the bloom slowly pour twice the amount of water that you have coffee. For example, when you use the 1:12 ratio from the table above, pour 110 grams or 4 ounces of water on your 55 grams or 2 ounces of coffee.
Be sure to pour slowly in a circular motion, working your way outwards from the center. But do not pour directly on the sides of the filter ! Allow the coffee to bloom for 40 50 seconds.

Alternative Chemex Brew Methods
My advice is to start with the basic brew method described above. Get a good feeling for the pouring technique and find out how the coffee tastes with your favorite beans. When you have found the optimal coffee to water ratio for your perfect cup, and when you feel adventurous, youll love the next part.

How Much Ground Coffee Should You Use
Now this is where all the ratios and scales typically come into play. If I were to follow the coffee experts advice, Id use 40-50 grams of coffee for 700 grams of water . But because I didnt want to pull out my kitchen scale every morning, what I really wanted to know was what that translated to in coffee scoops.
So let me break it down for you. 40-50 grams of coffee = 4-5 coffee scoops. One coffee scoop = 2 tablespoons = 10 grams.
Interestingly enough, all brewing examples I found online only showed brewing a Chemex half full I have no idea why. If you purchase the eight cup Chemex and would like to brew a full container, based on the math above youll need 70-80 grams of ground coffee or 7-8 coffee scoops for 40 ounces of water. Personally, I found this much too strong.
Chemex themselves recommend one heaping tablespoon for 5 ounces of coffee, which means 8 heaping tablespoons or 4 heaping coffee scoops per 40 ounces of water. At the end of the day, I actually preferred 3 coffee scoops with a full kettle of water. Remember though, Im a coffee novice who doesnt like my coffee overly strong.
Theres always talk of over extraction or under extraction when you start to alter coffee measurements, but really, its all about personal preference and taste. Each person is unique in our ability to taste, particularly when it comes to bitter compounds. So tinker around with ratios until you find what works for you.

How Do You Clean A Chemex
After you brew your coffee, just rinse it out with warm water and a few drops of liquid soap. I dont even remove the handle for this. Then turn it upside down to dry. This is how I wash my Chemex 90% of the time.
If you have residue on the bottom or feel you need a deeper clean, fill your Chemex halfway full with ice and a quarter full with water. Add a few tablespoons of salt and a couple drops of liquid soap. Swirl and slosh this around until its all bubbly, then pour it out and rinse.
The Chemex is also dishwasher safe , though I tend to hand wash using the two methods above.

Using a Chemex takes a little practice, but once you learn it will become second nature! The extra 10 minutes that are needed to make Chemex pour over coffee are absolutely worth it. Waiting Is The Hardest Part
- Once you reach your total weight , let the water drip through and note the bed of grounds, it should be flat.
- You can adjust your brew recipe based on strength or the amount of coffee you need. We suggest 1 part coffee to 16 parts water but you brew you, increase or decrease the strength to what tastes best!
How Much Coffee Should I Use
The final amount will all depend on how much coffee you want to make or need to make I could easily drink two cups in a morning! The best recommendation is to add eight tablespoons of ground coffee for 25 ounces of brewed coffee.You can up the ante and add 10 tablespoons for 25 ounces of coffee if you want a richer, more flavorful cup of coffee. Twenty-five ounces is a good amount for two people if you are drinking out of 12-ounce mugs.

What You Need To Make Chemex Coffee
Before you learn how to use a Chemex, youll need a few pieces of coffee gear. Heres what you need, and links to what we use ourselves and show in the video. It might seem like a lot of gear, but homemade Chemex coffee ends up being cheaper than a coffee shop in the long run! Also, you can use your kettle and food scale for things other than coffee .

Before You Start Brewing With Your Chemex
For best results, we recommend starting with whole beans. Grinding with a burr coffee grinder immediately before mixing with water will ensure the compounds that create the delightful aromas and flavors are preserved.
While this may seem complicated, we also suggest using a scale. It will make the brewing process much easier and remove any guesswork from the process.
Lastly, when compared to a traditional kettle, a gooseneck kettle will give you greater control over the pouring speed and where the water hits the coffee.

- Brewing: You use a paper filter with a Chemex, and a wire mesh filter with a French press. The actual process of brewing is entirely different, too, as you literally press coffee in a French press and let the coffee drip in a Chemex.
- Taste: Because of the difference in filters, theres also a big difference in taste. The Chemex yields a clean, aromatic cup, filtering out the bean oils during the brew process. The French press, on the other hand, doesnt use a paper filter, so many of those oils and sediments will make their way into your cup for a full-bodied coffee.
What Type Of Coffee Grind
For dosage, Chemex advises 1 rounded tablespoon of regular-grind coffee per 5-oz cup. Like any other brewing method, your best coffee will come after you make your own adjustments to the dosage. By regular grind, they mean coffee ground for an auto-drip. If the coffee is too weak either increase the dosage or grind a little finer. If the coffee gets clogged then use a coarser grind.

How To Use A Chemex Pour Over Coffee Jug
The Chemex pour over coffee jug is easy to use and results in delicious coffee without the bitterness that using a cafetiere can give.
We are a coffee household here, always needing its pick-me-up powers to get us going in the morning. Weve recently been enjoying using a pour-over funnel as our brewing technique, not only for the simplicity but also for the clarity of taste, especially when compared to a cafetiere.
Weve recently being trying a Chemex combined jug and pour-over funnel. Use is straightforward: the filter paper is placed in the funnel, wetted and pre-warmed with boiling water which is then poured out. The filter paper is a single circle of paper, folded twice and opened out. By aligning the side that has three thicknesses with the spout, it keeps its shape and pouring out the hot water is easy . Then just use in the same was as any pour over cone: add the coffee and some of the water to allow the coffee to bloom before pouring the rest of the water. Once the water has dripped through, lift out the filter paper and coffee grounds and discard, and the coffee itself is ready to be poured from the jug.
The advantage of pour over methods of making coffee to a cafetiere is that because with pour over, the finished coffee isnt sitting in contact with the grounds, its not as bitter, but packed with flavour. If you prefer brighter, fruitier flavoured coffee, then pour over is for you. For a stronger, more intense drink, stick with a cafetiere.
What Should You Expect From A Chemex
Chemex brewing will often yield a smoother cup than many typical methods. The biggest difference, however, may be the light body and thin mouthfeel depending on your approach.
- Traditional Chemex guides promote utilizing thick paper filters. Its important to note that using the filters may wick away bitterness, but will also wick away many essential oils. This will yield a thinner, lighter-bodied cup.
- We, however, prefer a fuller-bodied coffee. To get this from Chemex we like to use a reusable stainless steel mesh filter. This goes a long way at maintaining the coffees essential oils.

What Youll Need To Make Chemex Pour Over Coffee:
- Prime Roast coffee, ground medium
- Hot water just off the boil
Time needed: 5 minutes.
How to Make Chemex Pour Over Coffee
Place the filter in the brewer. Rinse the filter with hot water to preheat and create a seal between filter and brewer. Pour out rinse water while keeping the filter sealed to the brewers walls.
Add two Tablespoons of ground coffee per 8 ounces of water. This can vary depending on desired strength. Its best to grind the coffee as close to brewing as possible.
Boil water and then let it sit 2-3 minutes after boiling. Ideal temperature is 195-205 degrees Fahrenheit. If the water is too hot it will result in bitter coffee. Pour hot water just until coffee grounds are wet.
Allow the coffee grounds to bloom for 30 seconds.
Slowly pour the remaining water over the grounds until desired amount of coffee has been brewed. You can use a gooseneck kettle for precise pouring.
Discard the filter, pour the coffee, and enjoy hot!
