The first thing to know about how to make any nut milk is that there really isnt much you need to get started. But, there are a few pieces of kitchen equipment that you will need to have ready ahead of time so that your nut milk making sessions flow seamlessly from one step to the next.

  • A high powered blender
  • Nut milk straining bag or a mesh sieve lined with 2-3 layers of cheesecloth.

Anyone else feeling a bit like a homesteader during these Shelter In Place, Stay At Home, Self Isolate times? So far Ive made my own loaves of sourdough bread, multiple batches of crackers, planted countless numbers of seeds in hopes of a summer vegetable garden, and made a huge batch of chicken stock.

And Im just getting started!

I went through a phase a few years ago where I only made my own almond milk at home, but a newborn got in the way, and it quickly made its way back onto the grocery list. Now, trying to cut grocery bills and grocery store visits, Im back in the homemade almond milk game.

Almond Milk

Makes about 4 cups of almond milk

1 cup raw almonds , covered in water and soaked overnight in the refrigerator)

4 cups cool water

Drain almonds, place in a blender with water, and blend until smooth, about 1 minute to pulverize the almonds as much as possible.

Lay a thin dish towel over a colander placed over a large bowl, then pour the milk over top, in batches if necessary. Grab the corners of the cloth, and carefully gather them together and squeeze the milk through the cloth, catching the almond pulp in the cloth. Discard the pulp or google one of the many ways to use almond pulp.

Transfer to a covered container and store refrigerated for a maximum of 5 days. If you dont think you can use it all that quickly, freeze half of it!

Yes, you can also make keto diet approved coffee creamer with collagen.

TIP: To add collagen directly to the creamer, add it while the creamer is warm. It dissolves easiest this way.

The amount to add is up to you. Id recommend starting with 3-4 scoops for the batch of keto creamer.

How to Make Homemade Almond Milk Coffee Creamer

Its pretty simple to make a dairy-free alternative to sweetened condensed milk and evaporated milk.

To make dairy-free sweetened condensed milk, simmer the following ingredients on the stove until it is nice and thick:

  • 1 can full-fat coconut milk
  • 2/3 cup granulated sugar

Dairy-free evaporated milk is also really simple. Let your favorite milk alternative simmer on the stove until it is reduced by half.

How To Make Almond Coffee Creamer

Soak raw almonds for at least 12 hours or up to 24. Soaking the almonds creates an incredibly creamy texture in your almond creamer. Just be sure to drain and add fresh water after 12 hours if you will be soaking for a total of 24 hours.

Drain and rinse your almonds. Discard the soaking water and use fresh filtered water for blending.

Add your flavors and sweeteners of choice. I like using things like cinnamon, dried lavender, vanilla and coconut. Try adding honey, maple syrup, coconut sugar or even organic stevia.

Blend for 1-2 minutes or until mixture is nice and smooth.

Pour through a nut milk bag and carefully squeeze out as much liquid as possible into a glass measuring cup or bowl. I tried using cheesecloth for this step and ended up with a big mess. Because making almond creamer uses less water than almond milk, the resulting mixture is much thicker. A sturdy nut milk bag is very helpful to haveplus its reusable!

Store your almond coffee creamer in the fridge for up to 3 days. Use in hot or iced coffee for a creamy treat.

Even in the summer, I always start my day with hot coffee. But with warm weather right around the corner, I have started sipping iced coffee in the afternoons.

What If I Use Vanilla Extract Instead Of Vanilla Beans

If you use vanilla extract instead of vanilla beans, I still recommend gently warming the ingredients on the stovetop and whisking them until the mixture is smooth.

However, if you use vanilla extract you do not need to use a strainer or let the mixture sit on the stovetop for 30 minutes to infuse! Simply whisk it in!

Homemade Dairy Free Coffee Creamer

Prep Time:

  • After soaking, drain and rinse the almonds.
  • Combine almonds, coconut oil and water in a blender and blend well.
  • If using cheesecloth: strain the mixture through the cloth and squeeze the almond pulp to get the almond cream out.
  • If using a sieve: strain through the sieve and use a spoon to squish the almond cream out of the pulp. You might end up with some pulp in your cream but it will just sink to the bottom of your cup. No biggie 🙂
  • Add extract and sweetener. You may need to heat the creamer to dissolve the sucanat.

    How To Make Your Own Almond Milk Coffee Creamer

    If you’re missing a splash of cream in your morning coffee, I have something for you.

    This 2-ingredient coffee creamer, or half and half if you prefer, is rich, silky smooth and super easy to make! Ready?

    The base of this creamer is homemade almond milk, combined with some coconut cream for a creamier and thicker texture. I used to stir coconut cream in my coffee but the downside is that it tastes too much like coconut and the cream becomes very hard if stored in the fridge. By using a mix of almond milk and coconut cream, this creamer has a more subtle flavor and stays liquid in the fridge. Plus it’s lower in calories and fat.

    You probably know by now how to make your own almond milk, just soak some almonds overnight, blend with water and strain. The recommended ratio is usually 1:3, but I went with a ratio of one part almonds for two parts water to get a richer milk.

    Once your almond milk is ready, all you need to do is stir in the coconut cream and mix well. At this point, you can add your favorite flavorings: vanilla, cinnamon, cardamom, almond extract, etc. I usually prefer to keep mine unflavored so it doesn’t cover the taste of coffee, but it’s up to you.

    Just a tablespoon of creamer in your cup of coffee will take it to the next level. It has the perfect texture: incredibly smooth, thick but pourable, and it mixes very well in coffee. I love to stir it in iced coffee or cold brew.

    How To Make Healthy Coffee Creamer

    Let’s walk through the steps in making this healthy vanilla coffee creamer and don’t forget to watch the video.

    Begin by putting the ingredients into a small saucepan and whisking to combine.

    Next, warm the mixture until it just begins to boil then remove the pan from the heat. Be very careful not to actually let it boil, because it will result in a big mess!

    Next, scrape the seeds from the vanilla bean and stir them into the warm paleo coffee creamer mixture. Then add the whole vanilla bean pods.

    After the vanilla beans and pods are added, cover the pot, and let it sit for 30 minutes for the vanilla bean flavor to really infuse into the healthy coffee creamer.

    Choose a large glass jar and place a fine mesh metal sieve over it. Strain the vanilla coffee creamer into the jar and discard the vanilla bean pods.

Keep in mind that almond milk is made of blended almonds and water, so it separates more easily than other types of milk.

    Lets make keto friendly creamer for coffee!

    • Add almond milk and cream. Whisk in the almond milk and cream.

    If youre making the pumpkin creamer: Add pumpkin puree and pumpkin pie spice.

    If you are making chocolate creamer: Sift cocoa powder over the pan, then whisk in.

    Heat briefly, just until smooth.

    TIP: Exact amount you get from this keto coffee creamer recipe will vary depending on how much you reduce the condensed milk. If you reduce the condensed milk too much, add more almond milk and heavy cream at the end to get it to the desired consistency.

    • Add extracts. If using any of the liquid extracts, stir them in here.

    Fact: I need cream in my coffee. I cannot drink it black. For the most part, I find plain black coffee vile, watery, and bitter. But a nice splash of half-and-half transforms it into a creamy, warm, soothing, comforting elixir of the gods.

    So yeah. I need my cream. But my thighs do not need it. And so thats why were here. Thats why I figured out how to make almond milk coffee creamer, a healthier, non-dairy alternative to half-and-half. And Im so excited about it, now Im going to share with you!

    Have you ever made almond milk? Its shockingly easy! You soak the almonds in water. And then you puree the soaked almonds with fresh water. And then you strain the mixture. And youve got almond milk! And it seriously tastes incredible.

    I make a couple of tweaks to the standard almond-milk-making process for this super-rich almond milk creamer. First, I soak the nuts for the maximum amount of time 48 hours, changing out the water every 12 hours to keep things fresh. The longer you can soak the nuts, the creamier the outcome. More than 48 hours, though, and things could get funky . So no more than that, please!

    And then I puree the almonds with a little less water than I would if I was making standard almond milk. The result is a thick, rich consistency that works perfectly as coffee creamer.
