A cup of a light roast, medium roast, and dark roast will each have a different taste, but does that mean the caffeine content is different as well? Many coffee drinkers are interested to understand how the light roast caffeine levels compare to the dark roast caffeine levels. One major misconception about coffee is the assumption that darker roasts have higher caffeine contents. This way of thinking assumes that dark roasts will always have more caffeine than a medium roast which will have more caffeine than light roasts.
The answer to this question is tricky which roast has the most caffeine? It all depends on how youre comparing the roasts. Coffee beans are roasted for varying lengths of time to produce the desired flavor. Chemically speaking, caffeine itself is stable through the actual roasting process, but the coffee beans are not. Although the caffeine content of one roast may be different than another, its not because of the degree the beans are roasted to it all has to do with the weight of the beans after roasting.
How Instant Coffee Is Made
The first reason that instant coffee typically has less caffeine than brewed coffee is due to how it is made at the factory. There are two primary ways to make instant coffee that can then be quickly mixed with water to create a fast cup of joe at home.
Spray drying
Spray drying is the first method of manufacturing instant coffee. The factory will brew coffee in a regular fashion to create a normal cup of coffee. They start with the same beans as everyone else, roast them to their desired color, and brew them similarly to how you would at home but to industrial proportions.
This coffee is then taken and reduced into a concentrated, thicker, and more potent coffee form. This concentrate is fed through a system of tubes where it is sprayed out of nozzles at close to 500 degrees Fahrenheit into a chamber of extremely dry air. At these temperatures, the concentrated coffee spray will lose any water that survived the initial concentration efforts.
This processs end result is a fine powder that collects on the floor of the collection chamber. Being completely dehydrated, this powder can be mixed with hot water to create a cup of coffee instantly.
This process loses only a small portion of the caffeine content of the coffee. This is due to the extreme temperatures, forces, and the number of steps it is subjected to during the process.

Dark roasts taste stronger and that leads many to believe they contain more caffeine, too. The reality is more complicated.
Caffeine stays stable during the roasting process. Coffee beans expand as they roast, however, so the caffeine in the bean is spread over a larger area when the bean is dark-roasted.
Much of the moisture in the bean is also lost during roasting, so as the beans expand they also lose mass. The longer a coffee bean roasts, the larger it is and the less it weighs.
Of course, all of these variations are very subtle. More of the differences in the caffeine content of coffees are due to the species of the plant and its growing conditions than how it was roasted.
