How Long Does It Take To Roast Your Own Coffee

The size of the beans, density of the beans, etc. can all impact roast timing.

A lot can determine the length of time it takes to roast the coffee . In general it takes between 4-10 minutes to roast a batch in the hot air popcorn popper. I tend to prefer very light roasts, so mine usually come in between four and five minutes. The first few times you roast youll want to watch very carefully with all of your senses . As you roast more though, youll become more familiar with the process and youll be able to better judge where you are in the roast process and how long to expect it to take.

Keep in mind that all coffees are different. Just because one coffee took 5 minutes for you to roast doesnt mean the next one will be the same. The size of the beans, density of the beans, etc. can all impact roast timing.

Four Ways To Roast Coffee At Home

No matter how you choose to roast your own coffee, three things must occur for an acceptable result. First, you need to get the beans very hot. Second, for an even roast, you need to keep them always moving. Third, you need to be able to cool them quickly to avoid over roasting.

Roasting coffee beans can be very smoky, with some ways being worse than others in this regard. To clarify, as they roast, green beans release a flaky material called chaff that can make a mess of your oven or kitchen if not contained.

There are four commonly used methods to roast coffee at home. You can use your oven or a frying pan, but both of these tend to be messy and smoky affairs. In a similar vein, the stove offers no means of agitating the beans. An upgraded strategy is to use a popcorn popper while being aware that not all popcorn machines can accommodate coffee beans.

Rapid Plans For Roasting Coffee

One of the worst-kept secrets and techniques among dwelling espresso roasters is that some popcorn poppers can be used for roasting espresso. This stovetop popper wont offer you temperature control or smoke suppression, but it surelys a twin-use item that does the job nicely.

Begin with experimentation: take one lot and roast it with three to five totally different profiles. Then, take a couple of tons and roast all of them with exactly the same profile. Take notes on the results of each these tests to help you perceive the affect of roast profiles on completely different beans. Then, do all this again with completely different beans and profiles until you craft your good espresso.

First, you need a roaster. You can use a hot-air popcorn popper, or even a cast-iron skillet on the stovetop but I recommend getting an air roaster that does it all for you and doesnt let you burn the beans . I use the entry-level Fresh Roast, which I bought from online retailer Sweet Marias for about $80, though I see that they now instead sell a new model starting at $109. Its cheap enough to pay for itself within a year, with the greatly reduced cost of beans, at least if you drink much coffee and buy high-quality beans. It also makes a very nice gift for a foodie or coffee houndIve bought two for friends, and were all still using them, without repair, several years later.

Of course, you can go for a higher-end Behmor for $300, which will give you more control, better roasts, and larger capacity, as I intend to eventually but its easy to try things out on the Fresh Roast for starters. You can move up to $1000 home roasters later, to go with your $1500 copper-plated espresso machine. Any of these will work when youre learning how to roast coffee beans at home.

When green coffee beans enter a hot environment, the moisture content starts to decline. This is the first stage of roasting, and its known as the drying stage. Shortly into this phase, the beans begin to turn yellow. Many people refer to this as the yellowing stage.

Its when the beans start to darken, which is known as the browning stage, that the most important chemical reactions happen: the Maillard reaction, caramelisation, and Strecker degradation. These create many of the flavour and aroma compounds, including those responsible for sweetness and fruity acidity.

The browning stage ends with first crack, which is when the pressure inside the coffee beans causes them to crack open. Youll recognise it by a series of popping noises.

Eventually, all the water inside the beans evaporates and they reach second crack. The coffee steadily becomes darker and releases more carbon-like aromatics. The majority of the sugars break down, and as the roast progresses, the beverage will taste increasingly bittersweet with reduced acidity.

Coffee Roasting – Learn How We Lovingly Roast XO Coffee

Rob Hoos is a coffee roasting professional whos been working in the industry since 2006. His experience spans a wide range of work, including flavour profile matching consultancy. Hoos wrote Modulating the Flavor Profile of Coffee to share his approach towards coffee roasting with a strong focus on flavour development.

The book provides an in-depth analysis of chemical changes that occur during roasting and how flavours can be modulated. Hoos breaks the whole roasting process down into a few individual segments and explores the different mechanisms at work. He writes about the drying phase, Maillard reaction , development phase , drop temperature, and internal bean pressure.

In particular, he explains that controlling the duration of the Maillard reaction is useful for modulating the body of coffee while adjusting development time in relation to the degradation of organic acid helps to modulate acidity and complexity.

The author notes that drop temperature is an indicator heavily connected to the degree of caramelisation and pyrolysis during the development phase. Having too little or too much of these chemical reactions may lead to vegetal tones or highly bitter flavours with low complexity. Hoos also shares observation and results of his own experiments when controlling different segments of the roasting process.

Home Coffee Roasting Equipment

Theres no shortage of home coffee roasting equipment on the market, but if youre just starting out you dont need a lotespecially if youre using one of the two methods we recommend.

If youre pan roasting coffee, all youll need is non-coated skillet. Cast iron is great. Roasting coffee in a wok works well, too. Then grab a wooden spoon and a colander thats either enamel or stainless steel, and youre all set.

There is an alternative stovetop method that involves a certain type of popcorn popper. If you can get your hands on a Whirley Pop, its essentially a large pot with a crank on the handle that connects to a stirring mechanism on the bottom of the pot. If you use one of these, youre roasting the same way you do with a skillet, but the handle crank provides an easy way to keep the beans agitated without using a wooden spoon to stir.

For the popcorn popper method, youll need an air popcorn popper , a wooden spoon, a large bowl, and a colander thats either enamel or stainless steel.

The air popper should look something like this Presto Poplite.

While the Presto Poplite was designed for popcorn, similar machines are designed specifically for coffee. They are known as fluid bed roasters because the beans are heated by hot air that keeps them tumbling and moving. For example, the new Kelvin roaster released last year is a fluid bed roaster.
