A German coffee seller named Ludwig Roselius accidentally learned how to decaffeinate coffee after receiving a load of coffee beans that were soaked in seawater. He realized that soaking coffee beans would remove the caffeine and could open up his sales to more people.
Instead of sticking with seawater to do the job, he added benzene to the process. Unfortunately, benzene is a toxic chemical that irritates the respiratory tract, eyes, and skin. It can also cause headaches and dizziness just by inhaling it. Too much exposure to benzene can cause cancer and blood disorders.
Roseliuss method of using benzene to extract caffeine is no longer being used, as safer methods get the job done. But some people still worry about putting a natural product through an unnecessary chemical procedure.
Today, processors use different methods. Some only use water to soak the caffeine out, as Roselius learned in 1905. Some processors do use a chemical solvent that is considered potentially dangerous. They use ethyl acetate and methylene chloride to remove caffeine. This seems unnecessary, as water or carbon dioxide can be used safely.
The simplest way to remove most of the caffeine is to soak or steam green coffee beans. This opens their pores so the caffeine can be removed. Then, the roasters treat the beans like regular ones and roast them to a rich flavor.
Is It Bad To Have Decaf Coffee Every Day
Constantly consuming too much coffee can have terrible effects on you, negating the health benefits of coffee. Thankfully, with decaf coffee you dont have to worry about your quantities as caffeine, the component that causes all the mayhem has been taken out.

According a study recently published in the scientific medical journal, Frontiers in Neuroscience, a new study points toward further research that coffee, including decaffeinated coffee, can protect the brain including protecting again Alzheimers and Parkinsons. Results from previous research suggest that coffee compounds could provide a neuroprotective effect by inhibiting proteins from forming the terminally disruptive clumps and tangles found in the brains of Alzheimers patients for example.

Why has previous research found that coffee consumption correlates with lower risk of developing neurodegenerative diseases like Alzheimers and Parkinsons?
According to lead study author Dr Donald Weaver of the Brembil Brain Institute in Toronto Canada, We wanted to investigate why that iswhich compounds are involved and how they may impact age-related cognitive decline.”
The research team decided to study several compounds released during the roasting process in three types of coffee beans as follows:
- caffeinated dark roast
- caffeinated light roast
The analysis focused on how the compounds interact with amyloid beta and tau, the toxic proteins linked to the development of Alzheimers disease.
Phenylindane are present in both caffeinated and decaf coffee and could be central to its neuroprotective effects.

Nutritionist Ella Davar, RD, CDN, says it best: the decaffeination process “makes the decaf coffee an ultra-processed food item.” So, although coffee is fairly natural, its decaffeinated counterpart is the opposite.

Is Natural Really Natural

Although the Swiss Water Process and the CO2 process seem harmless enough, there is still room for debate about using solvents to make decaffeinated coffee.
- One of the solvents typically used is methylene chloride. This chemical compound exists naturally in some fruit, which is why some companies label beans processed using it as “naturally decaffeinated.”
