Coffee Retention & Contamination

Why The Baratza Encore Conical Burr Is The Best Coffee Grinder

Coffee retention, where grinds are left behind in the machine, can result in varying dry-coffee weight, altering your espresso extraction. Perhaps even more worryingly, it can cause contamination, with stale grounds mixed in with fresh ones.

Retention happens when ground coffee sticks to surfaces within the grinder. This is more likely to happen with flat burrs than conical ones because of how the coffee feeds out of the machine.

With flat burrs, the coffee is pushed sideways out of the burr set. This takes a lot of force, and to achieve this, the grinders engine rotates at a higher RPM. Conical setups, in contrast, require less mechanical force as gravity is helping the grains to feed through. This means the risk of retention is lower.

However, Marco stresses that retention can be reduced in flat-burr grinders, based on how the grinding chamber and its outlet mouth are built.

A blade grinder, meanwhile, works a little like a food processor, where the blades spin to chop the beans. These are a more affordable and accessible option for beginners.

Conical Burr Vs Flat Burrs

Conical burr coffee grinder can make the same ground as a flat coffee grinder. The difference is in the number of options these two models offer. Conical burr coffee grinder is easier adjustable. Moreover, there is a theory that flat burrs require more cleaning because the crumbs remain more than in conical burrs. However, it depends on each model. Its sure conical burrs are easier for cleaning.

Other Types Of Grinder

It is generally accepted that using a burr grinder is the best way to grind your coffee. As this article is all about the very best grinders available, we have focused on the best electric burr grinders. There are other types of coffee grinder out there, too, which are reviewed elsewhere on our site.

Manual burr grinders are cheaper, handheld grinders which often resemble a salt grinder. They can be decent as they are portable and of course hugely affordable, but they are nowhere near the level of quality of an automatic grinder. You have to do the grinding yourself

Blade grinders are also able to be manufactured and sold at a cheaper price point. There are many blade grinders out there for $20-50 and some of them do a decent job. Theyre a decent step up from manual handheld methods, but they tend to pulse the coffee rather than grind it consistently like a burr grinder. While not able to compete in terms of being the best coffee grinders, they are a decent cheaper option for some and we will be covering the best blade grinders in a separate article.

Oxo Coffee Grinder Vs Baratza Encore

If youve read my review of the Baratza Encore, youll know its one of my favorite conical burr grinders.

Although the Baratza Encore costs $169.95 on Amazon, its still in what I consider the entry-level bracket for burr grinders.

Anyway, if youre serious about improving your coffee game, the Baratza is well worth the investment.

The Baratza Encore is sturdy and easy to use. Its especially well-suited for drip coffee and Chemex grind sizes. Like the OXO, itll struggle to provide a consistent grind for your espresso machine.

Ceramic Vs Steel Burrs

Ceramic burrs are usually cheaper than steel. They are often utilized in manual grinders in the sub $100 category.

The ceramic conical burr from the Hario Skerton Pro vs a typical, conical steel burr . Which one do you think is sharper?

In general they tend to be more dull than their steel counterparts. When used in manual grinders, it means that you have to do a lot of extra work using your biceps.

Ceramic burrs are rarely used in electric grinders the main reason is probably that they are more fragile than steel and could shatter when getting in contact with a small stone that had gotten mixed up with the beans.

That being said, some manufacturers do use ceramic in their espresso grinders most famous is probably the Baratza Vario.

One good things about ceramic, however, is that the material is rust resistant and stainless, unlike most steel used in budget grinders.

But overall, I think its fair to say that in 2021 the time for cheap ceramic burrs is over. Go for steel instead, and your life will be lot easier.

In the grind consistency and range analysis, OXO’s grinder didn’t do as well as our other top picks, but it still held its own. On its coarsest setting, it produced almost comically large boulders, with a smaller fraction of midsize grinds and an immeasurable amount of fines.

On its finest setting, it landed mostly in the middle range, with a small but measurable amount of grinds below the 400-micron mark.

The unit has two flat burrs facing each other. But unlike conical, it crushes and grinds the coffee grounds using teeth. These are found on each edge of the plates/burrs. You can easily adjust the machine for different fineness or thickness levels.

What’s The Difference Between Burr Grinders Blade Grinders And Manual Grinders

OXO Barista Brain Conical Burr Grinder | Crew Review

Different coffee brewing methods have different grind requirements. Unlike the fine powder required for espresso, coffee made in a Chemex should be a medium-large gravel so that water can better pass through the filter. The basic blade grinder, which works like a mini blender or food processor, doesnt suffice for making good, consistent coffee for any brewing method. Blade grinders are prone to producing an uneven texture unless you pulverize the contents into absolute powder.

A burr grinder, which mills the coffee between two grooved surfaces, is the best choice no matter what your preferred brewing method is. And while some can run into the thousands of dollars, you can get a reliable, high quality machine for between $200 and $300 that will last you years and years.

Though we only recommend burr grinders, we did test a number of manual burr grinders, which use the same grinding mechanism, but operate with the crank of a handle. These are handy for the occasional coffee drinker who makes small batches, like a single cup of pourover. It’s also useful to have on hand for travel if you want to brew decent coffee in a hotel room or the office and forgo reliance on the bad drip machine or bad-for-the-environment coffee pods.

Manual Vs Electric Coffee Grinders

The first decision you have to make is whether you want a manual or electric burr grinder. In this article, were looking at exclusively electric grinders. They have the advantages of being faster and easier to use. If you brew a lot of coffee, youll definitely appreciate the ease of an electric grinder.

However, manual grinders are great options if you are brewing in smaller quantities. Theyre less expensive, quiet, compact, and portable.

In fact, most serious coffee lovers have both. So if youre looking for a hand grinder , read this article.

Things To Consider When Choosing The Grinder For You

  • Purpose. Will you be using it for Espresso, drip, French press, or all of the above?
  • Price. Pricier grinders are better engineered to produce a more consistent grind. They also use stronger burrs and parts, meaning they will last longer.
  • Leftover grounds. Some grinders leave more grounds in the grind chamber than others, which will make its way into tomorrows coffee. While it isnt the end of the world, it does put a dampener on our quest for the perfect cup of coffee.
  • Static. Grinding produces static to build up in the grinds. When you open the grind collector to tip it into your coffee machine, some can jump out onto your counter. Again, not a big deal, but some grinders are better designed than others to discharge this build up without mess.

How Often Will You Use It

Are you a one-cup-a-day type, or a pot-an-hour type drinker? Do you sometimes drink tea or treat yourself to barista-made lattes, leaving your coffee-brewing equipment dormant? Or do you like to have drip coffee in the morning, espresso midday, and then an after-dinner decaf?

While commercial coffee grinders typically come with specs outlining how many pounds of coffee theyre designed to handle before needing to be replaced, most home coffee grinders dont offer that kind of intel. Instead, you can rely on other clues that your burrs are wearing down.

  • Needing to keep adjusting your grind finer to achieve the same result. This is a normal part of using a burr grinder, but if you have adjusted to a considerably finer setting and arent satisfied with the results, your burrs might be ready to call it quits.
  • It takes a much longer time to grind the same amount of coffee.
  • Your coffee grounds come out feeling warm to the touch. As you continue to adjust finer in order to keep your quality consistent, the burrs will be getting closer together. Over time, that proximity combined with the dull blades on the burrs will cause friction, which will noticeably heat up your coffee.

If you regularly use your grinder twice or more per day, you may want to invest in a grinder that has replaceable burrs, which will spare you the cost of replacing the whole machine. If youre a little more of a casual user, a good burr grinder may last you a few solid years before needing to be swapped out.

Q: What Is A Burr Coffee Grinder

ChefWave Bønne Stainless Steel Conical Burr Coffee Grinder ...

A: Coffee grinders are categorized into two blade grinders, and burr grinders. Blade coffee grinders use blades to cut the coffee beans, while burr coffee grinders do the actual grinding work. They grind the beans between two plates , with one being stationary and the other moving.

The most significant benefit that burr grinders have over their blade counterparts is that the beans that are grounded have a uniform quality. Particles are consistent, meaning that your cup of coffee tastes better and doesnt include any chunks in it.

Mainly, they provide coffee lovers with the freedom to choose whatever form of fineness or coarseness theyll prefer.
