Peaberry Beans From Tanzania

A Peaberry coffee is a single, round coffee bean inside the coffee cherry. A normal coffee cherry holds 2 beans, side by side, each with a flat side. The peaberry is alone inside the cherry and shaped differently.

Because of the round shape and the fact that these beans are denser than most coffee beans, they roast more uniformly . Only about 5% of all best coffee beans in a given crop are considered peaberry. In order to get a lot of strictly peaberry beans, rigorous hand sorting is required to separate them from their half-bean counterparts. This added labor increases cost.

Peaberry is available from many regions but Peaberry beans from Tanzania are popular as they tend to have a brighter acidity, medium body, and notes of brown sugar and subtle fruitiness. Delicious coffee for a manual pour over or an automatic dripper.

This coffee is named after the Mandheling people who once farmed the coffee in northern Sumatra. Coffees from this area tend to have lower acidity with a sweet, smooth body. How Much Does The Roast Date Matter

It might seem like coffee has an eternal shelf life, but we promise it doesnt. Sure, you most likely wont get sick if you make coffee using year-old beans, but it definitely wont taste as good as if the beans had been fresh.

Once a bean leaves the roasting environment, its chemistry immediately begins to change. The bean begins to release carbon dioxide from the roasting process, a process called degassing.

As the bean degasses, all those lovely oils begin to oxidize, which diminishes the flavor of your bean. Coffee bean freshness is highly subjective, but you generally want to make your coffee between four days and two weeks from the roast date, depending on how you brew.

For example, if youre a fan of pour-over coffee, beans in their first week after roasting are optimal because youll get a more brilliant coffee bloom closer to the roast date.

But if youre looking for a good shot of espresso, you might want to let your beans rest a little longer around seven to nine days. After that, those older beans will be better for your next cold brew.

Remember, these are just general suggestions. Experiment and go with what tastes best to you.

Coffee Grading And Rating

Coffee grades can be confusing. How does a Kenyan AA compare to a Hawaiian Extra Fancy? What is a Colombian Supremo?

There is no single, universal grading system. The closest would be the Specialty Coffee Associations numerical rating system for green beans. Its based mainly on the number of defects in a bag of beans. These defects can result in bad-tasting coffee.

This system has five levels, but you only need to worry about the first two. The highest level is Grade 1, specialty coffee. Virtually all the coffees we recommend are specialty grade. Grade 2, premium grade coffee, can also be satisfying in the cup.

Many countries have their own rating systems. The state of Hawaii also has its own system that is strictly enforced. Some of these systems are based on the size of the bean. The bigger the bean, the more flavor it packs. Here are the top ratings for a variety of systems. If you see these designations, you know youre looking at a high-quality coffee.

How To Roast Coffee Beans Using A Popcorn Popper

How it Works

This is the way we primarily roast our beans at home!

This method requires the use of a Whirley Pop popcorn maker or anything similar that allows you to stir the beans continuously over an open flame. PS – you can buy one on Amazon! This is the one we have.

Note, do not use a nonstick pan or surface as this will impart weird tastes in the coffee beans. This method is very dependent on the color of the beans and the sounds they make as you roast them.

You will notice as you are roasting, the beans will progress from a green to a yellow color. When they are dark yellow, you will hear a popping sound and the beans will start to smoke.

It is very important at this point to stir the beans quickly to ensure they cook evenly.

After this, the beans will pop vigorously and the color will change pretty quickly.

The timing of when you take the beans off the heat will determine if the beans are light, medium, or dark roast.

For a light roast coffee, take them off as soon as you start to hear the popping and see the color change from yellow to brown.

To achieve medium roast, wait until the beans are a little darker brown and the beans are popping vigorously.

For a dark roast, leave on the heat until the coffee beans are barely popping.

How To Roast Coffee Beans In An Oven

How it Works

Preheat the oven to 500 degrees and spread your green beans out evenly on a baking sheet.

Place in the oven for 10 minutes, then take out and stir. Put back in the oven and roast until the desired roast is obtained, taking out to stir about every 2 minutes.
