Green tea and herbal teas arent strong enough to hold up to spices and are not recommended.

Easy Chai Tea Latte

French press is my go-to way to make coffee in the morning. I love the way it tastes and it makes the perfect amount for me and my roommate. A french press is a direct-contact form of brewing coffee, as opposed to a filter method. This means that a french press should be served immediately when it is ready, because if you leave it the beans will continue to steep creating a really strong cup of coffee.

When making a french press, you only want to heat the water to 190-210 degrees Fahrenheit, which is just below boiling. Boiling water will burn the beans because of the direct contact. This is why I suggest getting a pour over kettle that has a built in thermometer on top. But if you dont, simply bring a regular tea kettle to a boil, turn the heat off, and then let it sit for a 2-3 minutes before pouring over the coffee. This should bring it to just about the right temperature.

Some people will advise you to pour hot water into your empty french press, swirl it around, and pour it out before adding in the coffee beans, in order to acclimate the beans. I dont do this step, but it is an option. However, I do bloom the beans, which means youll pour a small amount of water onto the beans, just enough to get them all wet, swirl it around and let it sit for 1 minute. For lack of more scientific terms, this wakes up the beans.

    How To Froth Milk For Any Latte

    Youve brewed, spiced, and sweetened your tea, and now you must froth your milk unless youd rather have a classic cup of chai rather than a chai latte. The problem? You dont own an espresso machine or a frothing wand. Luckily there are three clever ways you can froth your milk for lattes.

    Whisk it: You can vigorously whisk your milk while heating it on the stovetop, which weve written into the directions below. This method works best with 2% dairy milk and coconut milk.

    Blend it: You can also froth the milk with an immersion blender before heating the milk in a saucepan on the stovetop. This method is best for non-dairy milks, like soy or almond milk, but also works with coconut milk, whole milk, or 2%.

    Shake it: The other method is to shake the milk in a jar and then heat the milk post-frothing. This method works especially well with whole milk and nut milks.

    After making my Awaken Spice Latte in the moka pot, I was reawakened to my love for the small and mighty apparatus. Now Ive started to alternate this method with the french press for my morning coffee. If you dont know, a moka pot is a stovetop method for making espresso. So this will be the only *true* latte made with espresso beans, although you could use espresso beans for all of the other methods as well. I love the moka because its fast, and creates really strong, delicious coffee. Plus a moka pot only costs about $20 as opposed to spending hundreds or thousands on an espresso machine!

    EQUIPMENT

    • 1/3 cup non-dairy barista blend

    INSTRUCTIONS

  • Unscrew the top of the moka pot from the bottom and remove the filter/funnel part from the bottom.
  • Fill the bottom part up with water until it touches the small metal knob
  • Place the filter/funnel part back on top of the water. Add chai spices to the filter and layer espresso grounds on top. Use the back of a spoon to tamp down the espresso beans, so they sit tightly in the filter.
  • Once full, screw on the top part of the moka pot.
  • Place it on your stove and heat over medium-high heat.
  • Soon you will hear the water boiling up and into the top part of the moka pot. Once you begin to hear this noise, turn off the heat, but keep it on the burner. Let it finish brewing.
  • Pour espresso into a mug, filling it halfway.
  • Froth your non dairy barista blend with a milk frother, and pour over espresso.

    What Makes This Recipe So Good

    I created this recipe in 2014. I had a costly obsession with a Starbucks chai latte. In an effort to lower expenses, I decided to experiment with making a chai latte at home.

    I found a few home chai lattes online, all of which suggested using a pre-made chai tea mix. I tried this option, but they all lacked the coffee shop flavor.

    I decided to make my own chai spice blend, using ingredients from my pantry, and pairing this blend with black tea. After researching the spices used to make traditional chai, and seeing what was stocked in my pantry, I decided to go with the following spices

    • Ginger: Used in stir-fry sauce, homemade granola, and delicious in smoothies.
    • Cardamom: Delicious in homemade granola, muffins , and quick breads. Fun fact: also commonly used as a supplement due to its health benefits: anti-inflammatory.
    • Nutmeg: Used to make banana bread, pumpkin spice latte, and many other baked goods.
    • Whole Cloves: Something I dont use very often. In the fall, add to boiling water to make your house smell amazing. If you dont have whole cloves, 1/4 teaspoon ground cloves will also work.
    • Allspice: Has the flavor of cinnamon, cloves, and nutmeg all combined into one great for baking.

    • I am using regular 2% milk. But, almond milk, coconut milk, or soy milk would also be delicious. Use soy milk to make this vegan.
    • I am using regular English tea bags but you can also use Earl Grey or Indian tea bags.
    • To sweeten, I like using honey or maple syrup. And yet, brown sugar has a wonderful caramel-like molasses flavor and also adds color. Use vegan sweetner to make this vegan.
    • Today, I topped it with whipped cream because it looks so fancy and pretty. But, usually, I just have mine as is without any whipped cream on top. Just a sprinkle of cinnamon and nutmeg works for me. You can even top it with milk foam.

    How To Make Chai Latte From Scratch

    1. MAKE CHAI CONCENTRATE

    Crush or chop star anise,cloves, and cardamom pods into smaller pieces so that the flavors can be infused better.

    In a saucepan, add all ingredients for chai concentrate except the vanilla extract. The vanilla extract will get added later.

    Use filtered water if you can since itll make your tea taste better.

    On low heat, let the tea and spices simmer. Stir occasionally.

    This can be made ahead of time and into multiple batches to heat up for chai lattes throughout the week.

    Tea Sommeliers Tip: Since there are so many spices and flavors combined together, you dont need to use the highest quality black tea. Feel free to use tea sachets or tea bags instead of loose tea.

    Strain out tea and spice solids using a mesh strainer.

    Add vanilla extract. The chai concentrate is now done!

    2. HEAT MILK

    Bring milk to simmer on the stovetop. When you see little bubbles form along the edges, take it off the heat. Keep an eye on it to make sure it doesnt boil.

    There are a few ways to make whipped cream and the easiest Ive found is using a handheld milk frother to whisk the heavy cream and sugar together. Use a tall container so that you dont make a mess.

    I like to make the cream with soft peaks and not too stiff so it lays on top of the chai latte better, spreading out on top.

    4. ASSEMBLE DRINK

    This recipe makes 4 servings so divide each part into 4 cups.

    Start by pouring half a cup of the chai concentrate into a mug.

    What Type Of Tea Should I Use In A Chai Latte

    Chai Lattes are generally made with black tea. Black Tea leaves are fully oxidized which gives them their deep black colour and rich flavour. Black tea also has more caffeine than green tea or white tea, making it a great option for a little pick me up.

    Some common types of tea to use for a Chai Latte include Assam or Darjeeling black teas.

    For this recipe, I like to use oolong tea, which technically isnt a black tea since its only partially oxidized. It falls somewhere between green and black tea. I find oolong tea has a soft and creamy taste and texture which pairs really well with the spices added to this Homemade Chai Latte.
